Zvery year, thousands of Canadians become un- necessary victims of food- borne illness. Most of these could have been avoided by f011owling safe food handling, or cooking practices.. These- are particelarly, important during the festive season. Here are a few safety guidelines for handling turkey from the food con- sultants at Agriculture Canada's Food Advisory Division, Unwrap the fresh turkey. when you get it home and wrap it loosely in waxed paper or ' aluminum foil,. Store the giblets and the uncooked fresh meat separately in the coldest part of the refrigerator. Always cook the fresh turkey within three days 'of purchase. If the meat is frozen, leave the plastic wrapper on. The refrigerator is the ideal placefor thawing as it keeps. poultry cold until its com- pletely thawed. Allow about 10 hours per kilogram or five hours per pound and cook within 24 ,hours of thawing, When thawing lit cold water, immerse the bird, in its. original wrapping, in water changed several times during thawing. Allow about two hours per kilogram. or one hour per pound and cook it within 24 hours, To thaw at room tem- perature, slit the wrapping along the back and place the bird, on a rack on a tray to drain as it thaws. For more even thawing, place the wrapped turkey in a brown paper bag, Allow three hours per kilogram or one and a half hour per pound. Cook it immediately or refrigerate and cook with 24 hours. Don't leave it at room temperature for any length of time once it has thawed. In any case, be sure to wash in hot soapy water all utensils and counters that the bird touches and dispose of the drippy wrappings with care. For example, if preparing the raw bird on a cutting board, wash _ the board and knife thoroughly before, starting to prepare another food, espeei4liy if the second food Is to be eaten raw, And of course scrub your hands as. well, Cook thawed turkey in the same way and for the same length of time as a fresh, bird. If you prefer to stuff it, do so just before roasting. Check for doneness. by using .ameattherinonieter. temperature of 70 'degrees; celcius (165 degrees F) in the stuffing or 85 degrees celcius (185 degrees F) -in the thigh. is your indication that the turkey is ready .for the table, Remove any leftover stuffing from the bird and chill or freeze. It will keep two to three ' days in . the refrigerator or two months. in the freezer, Chill or freeze the cooked meat within two hours or refrigerate up to three to four days. To freeze, remove the bones and the excess fat from. the large pieces. Or slice and cover with gravy, sauce or broth.
