soon be on the Ontario
market. The crop becomes
available in the early part of
September and there are
indications for good supplies,
report the marketing
specialists at the Ontario
Ministry of Agriculture and
Food.
The major varieties of
Ontario blue plums include
the prunes - Italian and
Stanley. They are medium-
sized plums with purplish
blue skins and yellow flesh.
They should be on the
market by September 5 and
be in good supply for 'two to
three weeks.
A relatively new variety
that will appear in good
supply for the first time this
year is' a variety called
NURSING GRAD —

Bluefre This is a large blue-
colored plum with yellow
flesh. It will be available
about September 8,' two to
three days after the prune
plums.
Most of the blue plums
grown in Ontario are sold on
the fresh market. Those that
go, to be processed are either
canned, used.in baby food or
in jam.
When buying blue plums,
look for plump, clean fruit.
Select plums thal are full-
colored and yield to slight
pressure. At home, ripen at
cool room temperature,
then refrigerate covered.
Wash only when ready to
use.
Blue plums area treat no
matter how they're served.
Their vibrant color makes
them a very attractive fruit,
perfect for eating out of hand
and for cooking. Try
poaching them with *some,
apple juice, honey, and
nutmeg for a special dessert.
They also make excellent
sauce for ice cream or a
tasty filling, for pies and
tarts. Blue plums can also be
frozen. Simply halve and pit
plums, then pack in cold
syrup (two cups sugar to
three cups water) or in dry
sugar (3/4 cup sugar for
every four cups of prepared
