Luscious, juicy, chin-
dripping good: That's an
Ontario peach! And they're
on the market now through
August and the first part of
September. Get some soon
and enjoy them while they're
in season, say the marketing
specialists at the. Ontario
Ministry of Agriculture and
Food,
Choose peaches that are
fully ripened. Look for a
creamy yellow background
color and peaches that yield
to gentle pressure. But don't
pinch them - they bruise
easily,
Ontario peaches are great
for eating • jug as they are.
Simply wash and enjoy. That
makes them easy, to carry
along on picnics and for
snacks,
For freshly sliced peaches,
you may prefer to peel them
first. An easy way to: do this
quickly is to plunge the
peaches' into boiling water
for 30 seconds then dip them
in cold water. Slip off skins.
To prevent sliced peaches
from darkening, sprinkle
them with a little lemon
juice, To serve peaches toss
them with some sugar or
drizzle with honey and chill
slightly before.serving,
Peaches are superb too
when cooked in different
desserts. Try poaching them
in white wine and honey for a
touch of elegance. And
peaches are great in crisps,
cobblers and, of course, in
delicious peach pies.
Enjoy peach pies now but
remember that .you can
freeze them for later too.
You can either freeze
completed pies, unbaked, or
freeze just the filling now
and make the pie later.
Simply make your favorite
peach pie filling but add one-
third more thickener to the
mixture. Place in a foil-lined
pie plate. Cover with foil.
Freeze immediately. Next
day, lift the foil package
from the pie plate, leave
peach package in freezer
and return pie plate to kit-
chen.
When ready to bake,
prepare pastry for a two-
crust pie, and line the pie
plate. Remove foil from the
frozen peach filling and fit
filling into the pastry-lined
pie plate. cover with top
crust, and vent for steam,
Bake at 220 degrees C (425
degrees F) for 50 minutes or
until crust is brown and juice
bubbles through the vents.
