MR. AND MRS. MARTYN VAN ESSEN
Mory Louise Warburton and Henry Martyn Van Essen were
united in marriage at Bethel Reformed Church, Exeter, on
August 2 with Rev. Henry Van Essen officiating. Mary is the
daughter of Mr. William Warburton, Huron Park, and the late
Mrs. Dorothy Warburton. Martyn is the son of Rev. and Mrs.
Henry Van Essen, formerly of Exeter, now' from Maitland.
Matron of honour was Susan Hoogenboom, sister of the
bride. Bridesmaids were Joan Van Essen, sister of the groom,
and Carolyn Perry and Eleanor Salmon, friends of the bride.
Bob Forrest, friend of the groom, was the best man and
Walter Van Essen, brother of the groom, Bill Warburton,
brother of the bride, and Ben Hoogenboom, brother-in-law of
the bride ushered the guests. David Rundle was the organist
and Carolyn and Nancy Perry ,sang a duet. The couple had a
camping trip in eastern Ontario and will reside in Toronto at
results in previous years, The
following. explanations may
shed some light .on the
problem. . '
Shriveled pickles are the
result of too much time.
between picking and
pickling, or too strong a
brine or syrup, or too much
vinegar for the .amount of
water used,
Soft or slippery pickles are
caused by too little salt or
vinegar in the brine, not
removingthe stem-end of the
cucumber; not removing the
scum from the brine each
day, using. very hard water,
or too warm a stage area
for the finished pickles.
Bellow pickles can be the
result of a flaw in the
cucumber's growth, too long
Asoaldng period, or too high
a turmentation teroPeratUre.
Dark-colored pickles are
the result of using, ground
rather than whole spices, the
presence of minerals
(especially iron) in the
water, or using copper,
brass, iron, or galvanized
utensils.
White sediment in the
bottom of the jar is likely
either salt, caused by using
table salt rather than
pickling salt, or a bacterial
growth which developed
during fermentation.
It is disappointing when
the first fruits of your labor -
or vegetables, as the case
may be - are less than per-
fect, Pickle with care.
Fresh Ontario sweet corn
is on the Market now, and oh
what a treat it is! Sweet corn
is at its peak through August
and until about the middle of
September, so enjoy it often
in all its glory, say the
marketing specialists at the
Ontario Ministry of
Agriculture and Food.
For your convenience,
sweet corn is available froln
local food stores, roadside
markets, farmers' markets
and pick-your-own farms.
One of the important
things to remember when
buying corn is, to choose the
freshest corn you can. In just
24 hours after the corn is
picked, it can lose up to 50
percent of its sugar. So
refrigerate corn Tight away
and plan to use it the same
day you buy it. If it is
necessary to store corn, keep
it in the refrigerator with the
husks on and use it the next
day,
Fresh corn will have fresh-
looking green outer husks
and dry silks. As the corn
gets older, the silk will start
to fall out, To check 'the
maturity of the corn, it isn't
necessary to peel back the
husk of the -cob. Just hold the•
cob tightly at the silk end.
This is the last part of the ear
to mature. If the corn is
ready, you'll be able to feel
the firm, large kernels
through• the husk.
When it comes to 'eating
sweet corn, keep it simple.
The freshness and delicious
flavor speak for themselves,
and don't need much help.
Popular touches are butter
and salt, but for a change,
try butter with different
seasonings.
\
Combine a herb
such as dried dill weed,
oregano, basil or chives With•
softened butter, then spread
on hot corn.
