Carrot cake
1/2 can butter
1 cup brown sugar
2 eggs
1 can (10 oz.) applesauce
1 cup all-purpose flour
1 cup whole wheat flour
11/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
11/2 cups shredded raw
Ontario carrots
Cream butter and brown
sugar in a large bowl. Beat in
eggs, then applesauce.
Combine dry ingredients.
Stir into creamed mixture.
Stir in carrots. Mix well.
Pour into a greased, floured
9 x 13 x 2-in. baking pan.
Bake at 180 degrees C (350
degrres F) for 30 to 35
minutes. Let cake cool. Top
with Butterscotch Glaze.
Butterscotch glaze
Melt 1/4 cup brown sugar
and 2 tbsp. butter together in
a saucepan over low heat.
Remove from heat. Stir in 2
tbsp milk. Add 1 cup icing
sugar. Stir until smooth.
Pour over cake and spread
evenly.
