tsps. vanilla.
Scald milk. Ileat egg yolks, adding
sugar and cornstarch, combine with
hot milk and cook over water 20 to 25
minutes, stirring "occasionally. Cool.
Beat egg whites vigil stiff.' Add salt
and fold into tray and freeze-to a heavy
mush, Remove from electric refrigera-
tor and beat until fluffy. Fold in Whip-
ped cream and return to freezing tray
to finish freezing',
VARIATIONS
Peach Ice Cream: Flavor vanilla ice
cream with % tsp. vanilla and % tsP,
almond extract, and add I% cups
mashed and sweetened peaches when
folding in whipping cream.
Peanut 331-ittle Ice Cream: Add % to
% cup crushed (rolled) peanut brittle
to vanilla ice cream when folding` in
whipped., cream.
Macaroon Bisque: Flavor vanilla ice
cream with sherry flavoring and add %
cup almond macaroon crumbs when
folding in whipped cream.
ORANGE FLUFF
% cup granulated sugar, % cup
cold water, grated rind 2 oraiTges,
1 cup orange juice, % tsp. gratin-
A, lated gelatin, l'tbsp. cold water, 2
cups whipping cream,
Cook together the sugar and the
cup cold water in a saucepan on Low
heat until a little of the mixture drop-
ped in cold water forms a soft ball. Re-
move from the heat and add the grated
orange rind, % cup orange juice, and
the gelatin which has been sprinkled
over 1 tbsp, of the cold water. Cool
thoroughly. Whip the cream with a
hand beater or an electric mixer at
high speed until stiff, then add the or-
ange mixture. Pour % cup orange
juice into the bottoln of a freezing tray
of an electric refrigerator. Potty the
orange cream mixture on top and
freep without stirring until set. Serves
6 to 8.
REFRIGERATOR ROLLS
1 cup boiling water, 1 cup shor-
tening, % cup sugar, 1% cups
bran, 1% tsps. salt, 2 eggs, 2
cakes 4:tompressed yeast, 1 , cup
lukewarm water, 7 to 8 cups flour.
Pour boiling water over the shorten-
ing and stir until melted. Add sugar,
bran and salt and mix well. When cool
add beaten eggs,, yeast cakes dissolved
in the lukewarm water. Add flour and
knead until smooth. Put dough into a
bowl and spread with a little melted
shortening and cover with wax paper.
Set in the refrigerator until ready to
use. Cut off small amounts of the
dough and shape in balls and place in
greased muffin pan. Cover and let rise
in a warm place until double in bulk,
about one hour. Bake in preheated e-
lectric oven (400 .degrees) for about
20 minutes:Makes 3% dozen rolls.
TAKE A TIP
1. Wet the bottom of freezing ray ..or-
taining cream mix to make freezing
quicker.
2. Beat ice cream mix as soon as it is
frozen to a ntushf then return to re-
frigerator.
S. Excessive sugar or: syrup prevents
freezing.
4. If the refrigerator needs defrosting,
the freezing will be slow.
5. If ice cubes have an unpleasant taste,
the trays and freezing unit should be
thoroughly cleaned. Lemons and or-
anges should be placed lower in the
cabinet if the aroma is of the oily
citric nature.
6. As soon as an ice mixture is frozen
firm, move the indicator half way
back to normal.

Mrs.- T. H. asks: How .do you pas-
teurize milk?
Answer: Heat milk in double boiler
to 143 degrees and keep it at that .tern-
perature for 36 minutes; or bring the
milk to a full roiling boil, then take
off stove instantly, but as soon as
froth subsides heat again to boiling
point and repeat once more. The milk
in either case should, be cooled quickly
in another pan surrounded by ice or
running water.
Mrs. M. M. asks: How do you sug-
gest storing bread at the cottage to
prevent moulding?
Answer: Keep bread in loosly wrap-
ped wax paper and place in a ventil-
ated, clean tin, A tiny glass of baking
soda left it; one corner of the box ab-
sorbs any aromas.
Mrs. 5. B, asks: How to prevent
cloudy crabapple jelly?
Answer: Add a tablespoon of lemon
juice to three quarts of prepared apple
juice to clear jelly and help it jell
quickly.
U. S. Feed Supply
The ;United States Department of
Agriculture reports that the prospec-
tive supply of all feed .concentrates fqr
194748 in the United States is the
smallest in six- years, but larger than
the average for the years just before
the war. With fewer live stock expect-
ed to be on the farms on January 1,
1948, the indicated 194748 feed supply
per 'animal unit is a little larger than
average,
