we shall have strawberries for sure.
Served in a variety a ways the lus-
cious berries are our favourite fruit, It
does not take much time to hull and
elean strawberries, but if they are to
be kept fresh, the fruit must be spread
in a pan and stored in the electric re-
frigerator. Any accompaniments such
as cream, cake or biscuits should be
fresh and delicate in flavour.
'FRESH STRAWBERRY ICE
CREAM
' % cup " sugar, 2 cups crushed
strawberries, 1 well-beaten egg,
% cup sugar, 1 cup thin cream,
1 cup whipping cream, whipped
to thin custard consistency.
Add % cup sugar to strawberries,
Allow to stand until sugar is dissolved.
Combine egg, % cup sugar and thin
cream. Add to washed berries. Place
in refrigerator freezing tray; Set con-
trol to coldest point. Freeze until sides
and bottom are slightly hardened, Re-
i move and beat well. Fold cream' into
froien mixture, Complete freezing. 6
servings.
CUSTARD SAUCE
Scald 1 cup milk in double boiler.
Meanwhile, stir together 2 tbsps, gran-
ulated sugar, 1% taps. corn starch, %
tsp, salt, 2 egg yolks in a. bowl. Grad-
lolly pour milk over egg mixture, _
= while stirring, Return to double boiler.
Cook over hot, not boiling, water, stir-
ring constantly, until thickened. Cool;
WI acid tsp, It mon extract. Chill. Pour
over strawberries.
WHEAT GERM BISCUITS 11 1 cup all-purpose flour, 1 cup
--11 wheat germ, 4 tsps. baking powder,
% tsp, salt, 4 thsps. shortening, %
cup milk,
Sift the dry ingredients and cut in
shortening. Turn out on floured board,
knead quickly and lightly, and roll to
one-half the thickness desired in the
biscuit. Cut, place on buttered pan,
and bake in electric oven, 450 degrees
for 12 min. Makes 12 medium-sized

Pour the scalded milk over the dry
oatmeal and let stand for 10 mins, Sift
flour, salt, sugar and baking powder
together and cut in the shortening. Add
cheese. Combine with the milk mixture,

knead lightly for about %/" min. Roll
4 inches long, Bake on greased cookie
sheet in electric oven (425 degs. F.)
for 12-15 mins. Makes 3 dozen. Serve
with a dish of strawberries,

LAZY MEADOWS

'Unless I miss my guess we have one
heh around here that will go to the
stew pot or frying pan by next Sunday.
She holds the record for out and out
cussedness. They can say what they
like about Barred Rocks being lazy,
but this old Biddy holds the world's
record for getting around in fine time.
Along about this time of year Mrs.
Phil gets in a fuss about the front lawn
and the surroundings of the house.
Seeding be darned , . we've just got
to get the place looking as if somebody
were living here, This perpetual bar-
rage of words goes on and on.
Finally there conies a time when it's,
just too much for a man to stand. We
take a half day off for curry-combing,
rakin g and general cleaning up, Leaves
and sticks and general debris brought
up by the pup must be collected and
burned, The lawn is given a hair cut
with the old lawn mower. The front
porch is scrubbed off and a new coat of
grey paint put down.
Then it comes tithe to prune the sh-
rubs and dig the flower beds tip. The
earth is pulverized down into fine bits
and Mrs. Phil gets out the flower seeds
and the plants she bought and in they
go.
Well, the other day when we were
through I must confess I was proud of
the results. Of course I was more tired
than if we had been working at the
seeding all day. This stooping and
bending, at what most men call ladies'
work, was certainly too, indelt for me.
There was a little time left before,
clioring so I sat down in the old rock-
et and smoked on the back porch. I
saw this old hen stroll by and was just,
too tired to be bothered chasing her.
That's where made a trajic mistake,
She 'should never have been allowed to
get by.
Mrs. Phil cattle Out and walked a4
round while the supper was tooking to
take a prideful look at our handiwork.
There was an agonized shriek from the
frOnt tho house and Mrs, Phil tante
