The Lucknow District Co-Operative Inc. will be mixing
fertilizer this Spring as usual.
Although we are warned of a great world-wide shortage of
fertilizer material we have a large simply of materials on hand and
much more ordered, so as long as we can secure materials we shall
continue to mix the usual grades as ordered by the farmers.
Besides these we mix a 2.12.6 without filler which has become
very popular as it can be sown with any ordinary seed drill. This
is known as "Pebble" and 40, lbs. of this contains as much plant food
as 125 lbs. of 2.12.6 with filler.

the present ceiling price of a pound
of shortening? •
A:—The ceiling price may vary ac-
cording to the brand and the increas-
ed price cannot be Charged. the Con-
sumer until the retailer has paid for
this product. Stocks on hand in re-
tail stores when the price increase
was announced must be sold at or
below the former ceiling. If you
will send us the name of the brand
and the name of the dealer selling
you the shortening we shall be glad
to check and give you the informa-
tion you desire.
Q:—Could you tell me if restaurants
have been allowed to increase the
price of a ham sandwich.
A:—If the ham is hot the price may
be increased five cents. If it is
cooked, cold ham the price may not
be increased under the recent allow-

Barring the privilege I told you of,
let us hope the electric waffle iron is
set upon the dining room table. Be-
cause "hot off the griddle" is the best
quality waffle. a
WAFFLES
2 cups sifted cake flour, 2 eggs,
separated; 114 ,tsp. salt, 3 tsps. bak-
ing powder, 1 114 cups milk, 6
tbsps. melted shortening.
Using electric mixer, beat whole
eggs 1 min. using high speed. Add
the milk and beat for 1 min. Add the
sifted dry ingredients. Add melted
shortening and beat for 15 sec. at high
speed or until the mixture is thor-
oughly, blended. Makes 8 to 10.
GINGERBREAD WAFFLES
113 cup shortening, 113 cup boil-
ing water, 113 cup molasses, 113
cup sugar, 1 egg, slightly beaten;
1 cup flour, 114 tsp, salt, 114 tsp.
soda, 112 tsp. baking powder, 1 tsp.
ginger, 112 tsp. cinnamon, 114 tsp.
cloves.
Place shortening iri a mixing bowl,
and pour boiling water over it. Add
molasses, sugar and egg. Stir in flour,
sifted with salt, soda, baking powder
and spice. Cook mixture in hot waffle
iron. Serve with syrup or with cottage
cheese. Makes 3 or 4.
SOUTHERN PANCAKES
1 cup buttermilk, 112 cup sweet
milk, 1 egg well beaten, 1 tsp. soda,
112 tsp. salt, 1 tbsp. melted fat, 2
tbsps. cornmeal, 2 cups flour.
Mix ingredients in order given,
Bake in electric waffle iron or sizzling
hot greased griddle pan. When bub-
bles form, turn and brown on other
side, Serve with sausages—or with
fruit for dessert, Makes 10 or 12.
ORANGE PANCAKES
.1% cup prepared pancake flour,
1% to 2 tbsps, grated orange rind,
few gratings nutmeg, 1 tbsp, sug-
ar (optional), f% cups milk or
water.
To pancake flour add orange rind,
nutmeg and sugar. Add liquid, stir un-
til batter is smooth. -Turn into pit-.
cher. Fry as directed for pancakes.
Serve hot with butter and honey. Mak-
es 8, * * *
TAKE A TIP
1. Use a scant measurement of salt
with flour for thin batter mixtures.
2. Use salt-free fat to grease griddles
and waffle irons since salt causes
mixtures to stick to metal. Melt fat
and skim off a small amount from
the top to use. Pork fat is better
than butter as the latter burns eas-
ily,
8, When electric waffle iron is pre-
heated to bake, it is ready to use,
Heat griddle pan until it is hot but
never smoking before pouring in the
ibatter.
4. Pour batter from a pitcher about
118 'cup at a time. Do net Spread
batter, Allow about 10 to 12 stills.
