ALPS CULROSS FORUM
The Alps Culross Forum held their
meeting on Monday night at the home
of Mr, and Mrs. Jack Burchill with 30
present. The broadcast, "What about
Chemurgy" was found very interesting.
During the group discussion which
followed it was decided that the farm
produce grown in this district is need-
ed for food and any waste products is
apt to be irregular and unsatisfactory
source of supply for manufacturing.
Progressive euchre was enjoyed by all.
COOKING TO TIME
Every trade and every craft has its
own tools and it's own language. The
homemaker must use the right tool at
the time and be able to follow specific
instructions to achieve baking success.
Many kitchen tragedies are the result
of misunderstanding of directions rath-
er than faulty recipes.
yesterday's recipes have been mod-
ernized to give more accurate inform-
ation. Recipes that called for "butter,
the size of an egg or a walnut", or "a
handful of this or that" are seldom
seen today. Definite amounts are stat-
ed, using standard, level measurements.
By following such instructions the
mixture will always be the same.
However, many a failure takes place
in baking or roasting after careful pre-
paration. The modern homemaker ap-
preeiateS the costliness of failure and
so prefers Up-to-the-minute recipes,
which state the degree of heat and time
required for cooking, With this type
of recipe success is assured not once
or twice, but every time.
Most ranges today are equipped with
oven thermOmeters or automatic heat
controls. • ShoUld your range have nei-
ther, a reliable oven thermometer may
be purchased at a low price, a small
investment, which will pay big diffi-
dends in better baking results. At no
time of the Year is the oven used oft-
ener than at this season. Thus, to re-
move the hazards of failure and dis-
appointment, the home economists of
the Consumer Section, Dominion De-
partment of Agriculture have some
helpful bakig tips to offer, Just a few
words about the cooking of that Christ-
mas bird, nothing short of perfection is
derrianded.
The bird of your choice should be
meticulously groomed and then truss
ed. The trussed bird cooks more un-
iformly, browns more evenly and looks
much better On the platter titan one
untrussed.

cook, will stand or fall by the results
of the next step. Improper cooking
can spoil all. The best results are ach-
ieved by slow cooking with dry heat.
LOW temperatures assure better flavour
and appearance, with less shrinkage
and loss of juices, • Use a shallow, un-
covered pan, with no water. Place
the bird on a rack, breast down, to
start cooking, then turn upright posi-
tion when about three-quarters done.
To test for doneness move the drum-
stick up and dowit. If the leg joint
gives readily or breaks, the bird is
done.
Christmas takes should be baked in
a slow oven, They are usually heavily
fruited and baked in deep pans. Too
high a temperature will Cause a. crust
to form over the surface of the cake,

heat penetration. The pans should be
lined with several thicknesses of well-
greased, heavy brown paper, extending
about one inch above the top of the
pans. Fill pans about 20 full. To pre.
vent scorching on the bottom, the pans
should be raised slightly above the
bottom of the oven or placed in a pail
of sand or athet. If your Christmas

cake contains less fruit than usual, a
higher baking temperature should be
used. This is also true of light fruit
cakes.
Cookies on the other band are small
and thin, They require a shorter cook-
ing at a higher tetnperatUre. Mixtures
containing chopped fruit, chocolate,
honey or molasses will require a lower
temperature to prevent scorching,
Shortbreads are thicker than cookies
and so require a lower temperature. If
the shortbread is baked in one large
piece, use a slow oven, allowing long-
er baking tittle.
Here is a time table, which will give
you at a glance, the oven temperature
And length of cooking time for the•var-
