the women at the last Red Cross
meeting we attended requeated it, and,
secondly, because accent surveys
show that Canadians are -not getting
sufficient; (1) Calcium; (2) Vitamin
Pro-
tein; (6) Vitamin G. This happens
largely through lack of knowledge of
food values-and seldom through lack
of money, Nutrition experts have
found that most of us don't get enough
vitamins and minerals because we
don't know how to spend our food
dollars.
Miaeral foods build up bone and as-
sist the work of every cell in the body.
The "hard-to-get" minerals are cal-
ann. and iron, Calcium is necessary
:not only for building strong bones and
teeth but also for proper functioning
of the :nervous system, proper beating
of the heart, control of the muscles
and eurichment of the blood. You can
make sure of your calcium quota by in-
-eluding in your daily diet one pint of
milk per adult and one quart of milk
per child: Milk products such as
cottage cheese may be used for part
of your quota.
Iron makes red blood cells and car-
ries oxygen to the cells of every organ
and tissue. Minor disturbances-even
slight infections-cause loss of iron.
But in spite of its importance, iron
cannot be stored in the body ind the
amounts pbtained from foods are very
small. To make sure of your iron
ration, we cannot stress too much the
green leafy vegetables - and luckily
they are cheap - .as well as fruits,
whole grain bread and cereals.

elettes, etc., and Make eggless cakes
wheft eggs are expensive.
Eggless Cake
Ya cup shortening, 1. cup sugar,
2 cups flour, 5 tsps. baking pow-
der, 1 cup milk, grating of nut-
meg or tsp, vanilla extract, V2.
cup raisins or citron cut in small
pieces.
• Cream shortening and sugar.
Mix and sift flour and baking
powder and add alternately with
the milk. Add flavouriag and
raisins or citron. Beat well and

Scrambled Kggs With Sweetbreads
4 eggs
% teaspoon salt
1/2 cup milk •
1/2 teaspoon pepper
2 tablespoons butter
1 sweetbread, pa:rboiled and diced
Beat eggs lightly, add salt, pepper,
milk and sweetbread. Put butter into
hot frying pan, when melted pour in
mixture and cool:, until of creamy con-
sistency, stirring and scraping from
bottom of pan until of right cOnsis-
tency.
Red Rarebit
2 „..tableSpoons butter
2 tablespoons flour
cup thin cream or rich milk
1 cup finely cut cheese
2 eggs, slightly beaten
% teaspoon soda
Salt, mustard, cayanne pepper
(dash of latter two) )
V.*. cup stewed and strained to-
matoes.
Melt .butter, add flour and ;blend
well ,add cream, stirring until it
thickens; add tomatoes in which soda
has been dissolved; add: cheese 'and
seasonings to taste and serve on toast.
Serves four.
Chocolate Nut Mallow
1 package marshmallows
1/.2 cup pecan meats
1 large'checolate bar (6-ounce)
Melt chocolate in top of double
boiler. Place marshmallows close 'to-
gether in buttered, shallow pan, pour
melted chocolate over marshmallows
and sprinkle with pecans. Cut in
squares.
