Baked Yellow Pike sir Whitefish
1 4-1b, fish cleaned- and trimmed,
but not split,
4 strips bacon
Cooking oil
Salt
S 1 qt.' (4 cups)t461b7ead cubes
3 finely chopped onion

4 tbsps, hat celery liquid

Mix. salt and pepper into liquid and
stir in celery. Pour this mixture
slowly over bread cubes with which
sage and onion heve been nnixed, stir-
ring to moisten thoroughly, Cover
for a few moments, Dip fish into a
solution made in the proportion of two
tablespoons salt to one cup :cold water,
and allow to stand five minutes, Drain,.

with cooking oil, Lay two strips of
bacon in greased pan, stuff fish, tie
with string to hold stuffing in and
pet it on bacon strips. Lay two
strips of bacon on •fish, put in centre
of oven -and bake for ten minutes at
500 degrees F., then lower temper.

Lemon Pudding
2 c, water
1 c, sugar
2 tbsps. cornstarch
Juice 11/2 lemons
Whites 'of 3 eggs, beaten stiff
Dissolve cornstarch in a little cold
water. Heat 2 cups water in top of
double boiler, add sugar, stir until dis-
solved, then add cornstarch gradually,
stirring constantly until it is smooth,
add lemon juice and a little grated
rind, if you like, Cook for 15 min-
utes, then take from stove, fold in stif-
fly beaten egg whites and pour into
mould or pudding dish, Serve cold
with cookies or crackers.

"wet" a discount of 20c per bushel.
The soyabean crop -is ready for
harvesting now, ,Especially is this
true of earlier varieties like Mand-
arin and Kabott. Later varieties like
O.A.C. 211 and A,K, will be ready in
about 10 days.
Soyabeans are ready to 'harvest
when the leaves have fallen from the
plants and' the seeds are quite firm,
It is important to have the seed well
into the dough stage as difficulty will
be found in storing seed containing
more than 14% moisture. Once soya-
beans have passed the dough stage,

humble navy bean. A dash of soda

green vegetable. Rut try a little soda.

dition of the soda softeres up the
tough bean coat and reduces' your
cooking time, so that you gain more.

syrup; 2% cups all-puropse flour,
1/2 tsp, salt, 1%, tsps.. baking soda,.

Method:. Combine sour milk and
corn syrup, Sift in the dry ingre-
dients; stir vigorously; 'add melted.

serving ripe encumbers as a vegetable.
Answer; Cucumbers in Cream.
6 medium cucumbers, 1/2 tb. fat, 11l
tbs. butter, 11/2 tbs. flour, 1% cups
milk, 1/2 tsp. salt, ltb. chopped pars-
ley, dash of paprika, pepper, mace.
Peel cucumbers, quarter and remove
seeds. Cut in half, Cook in boiling
water, salted, with fat added. When
tender, drain, saving the liquid, Melt
the butter, blend in flour and let bube
ble gently for 3-minutes. Slowly add
the milk. Cook and stir until thick-
cued; acid seasonings and cleat; pour
over cucumbers and sprinkle with
parsley.
Mrs, M. G. suggests: "Crisp top-
pings for your fruit puddings, Wheat
flakes, corn flakes or rice flakes, or
a mixture of these, saves a third of the
sugar required,"

THANKSGIVING
Hello Horeernaleers! Don't miss the
joy of a real old-fashioned Thanks-
giving dinner even in these war days.
Not in any part of Europe, not in Rus-
sia nor in the British Isles for that
matter, .can Thanksgiving be celebrat-
ed this year. So every Canadian cit-
izen should usher in this old-time
harvest feast with a sincere prayer of
Thanksgiving for a free country
eyhere the harvest is plentiful; where
wood and coal for winter fires can
'.still be had; where hearty laughter of
young and old can still be heard; and
where citizens may worship on the
Sabbath as they wish.
Thanksgiving Day may be kept in
the traditional way - with family
gatherings - 'but don't forget to keep
your home open, too, to some of the
lonely boys and girls in the war serv-
ices. You will get a thrill from shar-
ing your Thanksgiving dinner and
serving the good old turkey in all his
- glory to some of these young folks.
RECIPES
Braised Capon
4-pound fowl, cleaned and trus-
sed; 2 slices fat salt pork, 314 inch
thick; 5 slices carrot, cubed; 1/
onion, sliced; 2 sprigs thyme; 1
sprig parsley; 1 bay leaf; 2 tbs.
butter; 2 cups boiling water or
chicken stock.
Try out pork. Strain fat, add car-
rot, onion, parsley, and bay leaf. Cook
5 minutes. Add butter and fowl.
Cook until surface is well browned,
turning often. Place on trivet in deep
pan, pour over fat, add water or stock,
Cover and bake in electric oven at
350° until tender, adding more water
if needed, Strain stock, remove fat,
.arid use for sauce or gravy.
Pumpkin Cream Pie
Pastry for 9" pie, 2 eggs slight
ly beaten, 1/2 cup brown sugar, 1
cup canned or cooked pumpkin,
1 tb. corn starch, 1/2 tsp. salt,
tsp. cinnamon, 1 tsp. ginger, 1:1.11
cups rich milk.
Line 9" pie pan with pastry; flute
pastry edge. Bake in hot oven (450"
F.) for 5 minutes; remove from oven.
To slightly beaten eggs add all the
other ingredients, except 1/2 cup of
the milk. Pour into partially baked
shell; pour remaining 14 cup carefully
on top. Bake in an electric oven
<450° F.) for 10 minutes; reduce heat
tto 350" and continue baking for 30
minutes or until a silver knife inserted
in the centre comes out clean. When
tool, serve a tablespoon of whipped
cream, flavoured with orange flavour-
ing, with each serving.

threshing, if the Soyabeans are dry,
the concaves should be removed and
a block of wood substituted. If the
seed is damp, thetoncave may be left
in but most of the teeth removed. In
either case, the speed of the cylinder,
should be reduced .by one-half while
the remainder of the machine should
run at normal speed.
