An increase from 500 to 3000 acres of soyabeans in Huron County will provide much needed oil for the Mantle 'lecture of paints, varnishes, war-mun- itions, and other essential products, The Federal Government has guar- anteed a minimum price of $1.05 per bushel delivered Toronto, so working this •beek, and taking into consider- ation the handling charges that the local Elevators should get, the local elevators should pay the farmers $1.78 per bus. for No, 2 soyabeans; No, 2 Soyabeans must be 14% or under in moisture. Should they be No, 3 beans there would be 3c discount and No, 4, 10c discount. If any of these grades tested "tough", that is 14,1 to 16% moisture, there would be a discount of 2c per bushel; If "damp", that is 16.1 to 18% there would 7c discount; If "moist", that is 18.1 to 20% moisture there would be a discount of 13c; and anything over 20% with a grade "wet" a discount of 20c per bushel. The soyabean crop -is ready for harvesting now, ,Especially is this true of earlier varieties like Mand- arin and Kabott. Later varieties like O.A.C. 211 and A,K, will be ready in about 10 days. Soyabeans are ready to 'harvest when the leaves have fallen from the plants and' the seeds are quite firm, It is important to have the seed well into the dough stage as difficulty will be found in storing seed containing more than 14% moisture. Once soya- beans have passed the dough stage, little danger from frost damage will. be found. This. enables the harvest- ing period ro be delayed until the moisture content has been reduced. 'At the present ,motriel t the Canad- ian people have available a cheap and palatable source of minerals and vite- mins, those food elements so vital to' maintaining health. This source of potential health is the year's crop of vegetables, Despite certain periods of anxiety, the crop has been an ex- cellent on; well beyond expectations, it is up to the Canadian housewife to See that the supply of vitamins end minerals really arrives at the place, where it will do the most good: This she can only do if she uses the mod- ern up-to-date cooking methods, Here are some interesting facts three things happen to vegetabde vita- inin•s before 'you eat them and this. is. true chiefly of the 13 vitamins and vit- amin C. First, some vitamin is des- troyed, lost for good. Second, Part of both vitamins and minerals dis- solves in the •toeking. water. .Third, a„elot of what is left of the vitamin C also vanishes if you leave .your vege- tables sitting around in the wanting oven before serving. • Now, the longer the cooking per- iod; the greater the actual destruction of vitamin; the more water You use, the greater the loss by dissolving ,in the cooking water, So here •are your rules for conservation of vitamins and minerals. 1, Cook all vegetables as lightly as, possible, 2. Cook them as quickly ae possible. 3. Serve them as soon as they are- cooked. In other .words, time your cooking so that, the last job before serving the. meal is putting the final touches on the vegetable,s - and do it fast, And here is something you may not know - there is one :vegetable that benefits by the soda treatment, the humble navy bean. A dash of soda for keeping that 'fresh 'colour, is a. course, the most efficient way of des- troying most of the C content of any- green vegetable. Rut try a little soda. with your boiled beans (navy, remem- ber, not green) and you get the op-, posite effect, This is because the ad- dition of the soda softeres up the tough bean coat and reduces' your cooking time, so that you gain more. than you lose, Navy beans, by the way, are an _excellent source of vita- min B1 and a not to be despised meat- substitute. The seeds should be quite dry, to facilitate the threshing and for safety in storage, 'Where a combine is not available, the, grain binder may be used. Less loss of seed evill be experienced if the binding is done when the pods are damp and toughned with dew, The sheaves may then be eetooleed until ready. to thresh. In using the grain separator for threshing, if the Soyabeans are dry, the concaves should be removed and a block of wood substituted. If the seed is damp, thetoncave may be left in but most of the teeth removed.
