The tomato season is now at its height, and while the hot weather con- tinues tomatoes will he served for the most part in aalacls, and a little, later hot tomato dishes will grace the sup- per table, The spicy aroma of tomato relish from the kitchen is one of the first signs of early fall, and with many recipes available housewives will be busy putting away the garden vege- tables in the form of pickles and re- lishes for winter use, Here are some of the favouritq tom- ato recipes of the Consumer Section, Marketing Service, Dominion Depart- ment of Agriculture, Oven Canned Tomatoes Select firm tomatoes of medium or small size. Wash. Using wire basket or cheesecloth bag, immerse in boiling water 1 to 3 minutes or until skins will slip off easily. Plunge at once into cold water. Pack carefully in hot sterlized jars. Odd 1 teaspoon salt for each quart jar. Fill jars with boiling water or boiling strained tomato juice to within one-half inch of top. Run sterlized knife down side of jar sever- al times to allow air bubbles to escape, Place new sterlized rubber in position and screw top on tightly, then loosen back one-half turn. Put on rack in oven having jars about one and one- half inches apart. Process at 275 de- grees F. for 35 minutes for pint jars. When coolenough to handle remove from oven and complete seal. Invert jars. Tomato Cocktail 18 ripe tomatoes 1 cup chopped celery % cup chopped onions 3 sweet green peppers 1 sweet red pepper 2 tablespoons salt 2 tablespoons vinegar lit cup sugar Wash and cut tomatoes, but do not peel. Chop the peppers finely. Mix tomatoes, celery, onions, peppers and salt together. Boil for one-half hOur. Strain through a coarse sieve. Add the vinegar and sugar. Boil three min- utes, Seal in sterlized jars: Stuffed Tomato Salad 4 medium-sized* tomatoes 4 hard cooked eggs chopped % cup chopped celery 2 tablespoons .chopped green pepper YR cup salad dressing Salt and pepper to taste Cut tomatoes almost through twice, to form petals, and place in lettuce cups, Combine remaining ingredients season to taste, and pile on tomatoes. Variations Potato salad mixture Vegetable salad mixture Any left-over cold meat, diced Cottage cheese Broiled Tomatoes With French Dressing 6 firm medium-sized ripe tomatoes % cup French dressing 2 tablespoons cracker crumbs 2 tablespoons melted butter Cut a thin slice from the top of each tomato. Then hollow them out slight- ly, Place 1 teaspoon French dressing in the hollow of each tomato. Stung By Bees Child Dies Freda Jean Waugh, 13-month-old daughter of Mr. and Mrs. Fred Waugh, Hyde Park, died in St. Jos- eph's Hospital, London, from bee stings received while she was playing in the yard of her home with her sis- ter. Canadians Led In Dieppe Raid London, — Canadian shock troops carrying the main Commando assault on :Dieppe, met theNazi enemy in the streets of the French town Wednes- day, fought him with every weapons they had and captured the main por- tions of the town. Dieppe, smashed also by naval guns booming from the English Channel and by bombs from the R.A,F. 'and R.C,A.F., was in flam- es, as planned, 'nine hours after the raid started. A Calgary tank regiment and units of the Royal Hamilton Light Infan- try and the Essex Scottish of Wind- sor, Ont„ infantry regiments, carried the main attack into Dieppe. A good deal of rubber belting is used. on the farm and W. Kalbfleisch, Agricultural Engine- er, Central Experimental Farm, Otta- wa, suggests that it would bd advis- able to make every effort to keep rub- ber belting away from oil, grease and where possible sunlight and heat, in order to keep it in the best condition. He also suggests keeping a lookout to avoid abrasions and excessive load- ing, which may destroy a rubber belt in a short time. Belt dressing, he says, should only be used when a belt is slipping in the pulley, If dressing is required continuously then the belt is being overloaded or the pulleys on the machine are too small or are improp- erly lagged to give the belt sufficient surface to carry the load. While it may not be possible to keep belts out of direct sunlight when being used, they should be protected when not in use. Where belts are not endless and re- quire a fastener or connection, this part of the belt is the weakest link. Fastenings should be square, the belt ends cut accurately, and the location of the punch holes for lacing or the clinching of rivets or prongs, must be just right. To prevent edge wear of the belt, shafts should be kept parallel and the belt in line: Trying to hold belts on pulleys by guide stakes is damaging. Should a strip of fabric break loose from the main body of the belt it can be repaired with rubber cement. The surface of the body of the belt should be cleaned with a-wire brush to expose a fresh surface, The same treatment should he given the loose strip, Then apply the cement. Allow it to dry for a few minutes, then stretch the loose strip as it is laid in the belt and clamp the repaired part between two boards until the cement is set. Take care of machinery belts as it is going to be almost impossible to re- place them for a long time, advised Mr. Halbfleisch.
