Q. Is there a 'cure for weeping jelly? Mrs. A. B. M.
A. How serious is the weeping, Mrs. M.? The separation of tr.
small amouat, of syrup is normal, and will not harm.
jellies or Jams unless yeast and mold start growing
on the seepage, Remove such contaminated glasses
from the shelf immediately, To prevent excessive
weeping, leave a half.inch space at the top when
filling glasses. Paraffin, cover tightly and store in
a cool, dry place that is free from dust and mildew...
Q. Why do air pockets form under the paraffin on my jellies an&
Jams? Elbanor M.
A. Air pockets under the pv1.1:11111 are usually due to the thickness
of the paraffin. If the coating ,s t lInvY, it will not be elastic enough
to keep the shape of the jelld c4; enels, in which case the paratim
and jelly surface may separate suf.; foun a pocket. The paraffin. coiling
should be only about y8 inch vile,
Q, What is pectin? Mrs. 1), E,
A. Pectin is tbe natural "stinner" in fruits. A certain proportion -
of pectin, acid, and sugar is necessary to jell a jelly, and to Jam a jam.
Q. Why didn't my strawberry jelly set? I used tho "cap for tap'',
rule— one cnp of juice to eaeh cup of sugar. It Was Just like syrup lin.
matter how long I boiled it. My neighbor's strawberry jell always sets
and has a lovely flavor. Mrs. M. A. M.
A. Your ciliation ie closely related to Mrs. D. E. L.'s. Strawberries
have so little pectin of their own that they won't jell by themselves, and
this natural stiffener must be added to YOUr fruit and sugar, TrustWorthy col/M.10MM pectin comes in both bottled and powdered form, with Special
recipes for each fruit. Therg0 directions require only a haltininute boil
for strawberry jelly, Vire. D.
Q. What size measuring cup should be used in ,jelly making.

TESTED RECIPES
PICKLES
Recipes for. pickles are numerous
and most of them make excellent pro-
I ducts. There are many chopped rel-
ishes and sauces which are compar-
atively easy to prepare but pickles
where the vegetables are left whole or
large pieces require more care and
patience.
To make good crisp pickles the pro-
portions are important but there are
other redtails worth watching. The
best way to be sure of good pickles
is to find out what has caused failures
—your own and your neighbours'—
and learn how to avoid them.
Pickles may be hollow, wrinkled,
too soft, too hard, or too tough, They
may be of poor colour, either cloudy
or dull instead of bright, clear green
or white. Any one of these faults may
completely spoil the pickle.
Hollowness in pickles is caused by
allowing too long a time to elapse
between picking and pickling..
Wrinkled pickles are common. In
pickling the natural juice is drawn out
and replaced by a pickle mixture.
This 'change should be made gradually.
Too' strong brine or too tweet syrup
will'make wrinkled gherkins. A strong
brine for two days will not• have the
same result as a weaker brine for nine
days.
Strong vinegar, weak brine; or over-
heating will cause pickles to be, soft
or flabby. Pickles should be merely
heated through—never really cooked.
Ripe cucumbers, pearl onions, or
cauliflower often lose 'colour on at-
count of inferior vinegar, Good gii.de
cider vinegar is of clear, pale aniber
colour and excellent flavour. A white
fceitrIlv. *gar is now obtainable if pre-
Water containing too much mineral,
particularly iron, will darken pickles.
If % cup vinegar is added to 1 gal-
lon of brine made with very hard wat-
er, the difficutlY will be overcome,
One-half cup medium coarse salt to
1 quart water is the standard briee,
Boiling water is used to dissolve the
salt but brine must be always cooled
before ,adding vegetables,
White sediment sometimes forms in
pickled beets horn the combination of
lard water., vinegar, and salt, If very .
hard water, is boiled thoroughly and
allowed to cool before using for pickle
mixture there should be no sediment.
Care—even to fussiness—is neces-
sary in making crisp, tender, clear,
pickles, 'but the, result is worth the
effort.
In making:certain sauces and relish-
es none of these difficulties arise but
to have perfect results any recipe
should be followed exattly,
