food label? What is a "durable
life date"? What does "Canada
Fancy" mean? If these have you
puzzled, read on. Food
consultants at ,Agriculture
Canada answer these and other
questions for you.
Information found on labels of
pre-packaged or proCessed foods
is put there to help, not confuse

government regulations, a food
label must include: 1) the
common name of the food 2) the
identity and principal place of
business of the food manufacturer
3) a complete list of all
ingredients: whole kernel corn,

different types of butter in the
dairy section of your supermarket
lately? You • may be asking
yourself what the difference is in
all these products.
The composition of the -butter
sold in Canada is regulated by
fedei:al laws. Milk fat is the only
fat that can be used in the making
of butter; it must contain at least
80 percent fat and at most 16
percent water. An approved
vegetable coloring may be added,
to give the desired color.
Creamery butter is made from
cream. The cream is separated
from the milk and is then
pasteurized. After a few hours, it
is churned to pertnit the fat
"particles to clump together. The
resulting butter is washed, salted
and mixed to evenly distribute the
salt and obtain a homogeneous
texture. Salt is used as
preservative in creamery butter.
Unsalted • butter is also
available; it has a more delicate
flavor than creamery butter but a
shorter shelf life. It is also used in
special sodium restricted diets.
• Cultured butter, well known in
Europe, has a distinctively acid
flavor. It is obtained by , the
addition of a special bacterial
culture to the cream before the
chtirning stage. Cultured butter
is higher priced than creamery
butter but can be stored longer
than unsalted butter.

contain about 30 percent less fat
than regular butter and contain

There are no standards at present
set down for butter spreads or

Food consultants at Agriculture
Canada advise you that butter,
like margarine has 100 calories in
every tablespoon, but also remind
you that it contains vitamin. A, an
important .vitamin needed daily.
You can use up too

of $2.00 on any qualifying
book or subscription. There's
no limit to the number of
books or subscriptions you
can purchase as long as
each one costs at least $3.00.

are eligible for the rebate.
Simply make your choice,
fill out the form and send it
off with your endorsed
Wintario tickets and a
cheque for the balance.
