Everyone needs good meals
Whether you're eight or
eighty, you never outgrow your
need for nourishing food, In fact,'
you may need to select your foods
even more carefully than ever.
Poor eating habits - at any age -
can be a cause of feeling out of
sorts so it's well worth the effort
to learn how to plan and prepare
adequate meals particularly if you
live alone or cook for two.
When you bring Meat home,
divide it into meal-size portions
and freeze. Or prepare scvc ral
different meals with the same cut
of meat..Buy on the basis of cost
per serving rather than cost per
pound. For example, a -medium-
size roast is not ,out of the
question. Leftovers from. a roast
beef dinner will make hearty
stews, sandwiches, salads,
casseroles and meat pies. For two
average servings of meat, allow
Vz to 2 lbs. fer boneless 'roasts.
ground meat or liver; 2/3 to 1 lb.
for bone-in roasts, steaks or
chopS; 'A lbs. for ground beef,
2/, lb for boneless stewing meat:
and '/4 lb for cold cuts. In the case
of ground beef, you might prefer
to bring it home and freeze
meal-size portions. Make
meatballs or patties and freeze
them, either raw or cooked.
If you like chicken, stew the
bird for chicken and dumplings.
Later, use part of the meat in a
stew,. casserole, _ or soup. Slice
some for a sandwich. Or, fry or
bake chicken pieces and freeze
some for later. Use the bony
pieces and scraps of skin to Make
broth.
Use the same pot to .cook two
foods. Cook your potato, whole,
along with another vegetable or
use a strainer or steamer to steam
.and warm other foods in the same
pot. When done, use a fork or
spoon to remove the potato before
draining your other vegetables.
Don't pass up all packaged or
convenience foods, such as
puddings, soups, macaroni
dinnerS, or cake mixes. They
sometimes tend to be more
expensive than making your own,
but do require less skill and
energy. If the package seems too
large, make up half or a quarter of
the package..If you Open a can of
food, use only part of it and freeze
or refrigerate the rest in a covered
container. Many items are
versatile, for example; use
canned or dried . soup as
ingredients in casseroles or for
sauces;. use cake mixes for
puddings and other desserts.

recipe for "Baby neefies and
Meatball's", Serve Meth' as
"Meatballs in.Mushroom Sauce"
or as "Meatball Stroganoff".
Baby Beetles and Meatballs
2 pounds ground beef
3/4 cup rolled oats
1/2 cup finely .chopped onion
2 teaspoons. salt
1/4 teaspoon pepper

1 beaten egg
1/4 cup milk
2 teaspoons.
Mix beef, oats, onion and
seasonings. Combine egg,' milk
and Worcestershire sauce. Add to
m cat, blending well. Divide
mixture in half. Shape half in 4
loaves and remainder in about 24
11-inch meatballs. Bake loaves
hour at 325°. Place meatballs on
rack in baking dish and bake 40
minute's at 325°F.
Serve 1 loaf per person and
freeze remainder. Frozen loaves
can be reheated 20 minutes at
350°F.
Serve 4 meatballs per person
and freeze remainder. Thaw
about . 2 1/2 hours at room
temperature. Serve as Meatballs
in Mushroom Sauce, or Meatball
Stroganoff.
Meatballs 'in Mushroom sauce
2 tablespoons chopped onion
1 cup sliced mushrooms
1 teaspoon fat
I. 10-ounce can condensed cream
of mushroom soup
1/4 cup water
1/4 , teaspoon Worcestershire
sauce
8 cooked meatballs
Saute onion and mushrooms in
fat Until onion is transparent. Stir
in soup, water and Worcester-
shire sauce. Add meatballs, cover
and heat through (5 to 10
minutes). Serve with hot cooked
noodles or rice, if desired. 2
servings.
