Bulk buying of beef is a popular
way to purchase meat, but you
need to know some of the pros
and cons before you buy. You
have several alternatives: - to buy
.a side; to buy a
front or a hind quarter; to buy
wholesale cuts; or to buy retail
cuts.
• When buying a side or quarter,
be prepared to' use all cuts, from
steak to stewing beef. If your
family will eat only tender cuts,
there's no point in purchasing a
front _quarter. However, less
tender cuts can be just as tasty as
more expensive cuts if cooked
properly.
Bulk beef is normally sold on a
hanging weight basis - before the
meat is cut and the bone and the
fat trimmed. There will be
approximately 25 per cent
trimmed as bones and fat from a
side. For example, if you buy a
300 lb. side of beef, only about
225 lbs. of meat will go into your
freezer. The actual price per
pound is therefore higher than
the qrioted sale price. If the sale
price was'90 cents per pound, the
price you pay for the actual meat
would be $1.20 per pound.
A front quarter has a higher
proportion of less tender cuts
than a hind quarter. Hence a front
quarter may sell for less per
pound than a side, and a hind
quarter may sell for more per
pound 'than 'a side. The largest
percentage of a front quarter is
made up of pot roasts, stewing
and ground meat, with a small
amount of tender rib steaks and
roasts. The hind quarter has a
larger percentage of tender
steaks such as sirloin and
porterhouse and moderately
tender roasts such as rump,
round and sirloin tip, and some
stewing and ground meat. if
you're not interested in all the
cuts from a side or quarter, then
consider buying a wholesale cut
such as the loin, hip or chuck.
Always check to see if the price
of cutting, wrapping and quick-
freezing is 'included.. Quick-
freezing ensures quality • and

have adequate space in your
home freezer to do so. You• should
not plan to freeze more than fifty
pounds of meat in a sixteen cubic
foot freezer in a twenty-four hour
period. If roasts and steaks are
wrapped in airtight packages,
they can be stored at - 18 C (0 F )
for 10 to 12 months. Ground beef
may be kept 2 to 3 months.
Make sure that the side,
quarter or wholesale cut is
marked with the "Canada
Approved" or"Canada" stamp,
guaranteeing that the meat is fit
for human consumption. If the
meat has been graded, it will
have a brown square mark on the
main wholesale cuts of the
carcass and a ribbon-like grade
mark on each wholesale cut. The
color indicates the grade: Red,
Canada A; Blue, Canada • B;
Brown, Canada C; Black, Canada
D. Canada A and B grades have
four fat levels, with Al the
leanest and A4 the highest
proportion of fat. Consequently,
trim on an Al or B1 carcass is less
than on an A4 or B4 carcass.
Retail cuts at "special" prices
are another alternative to
consider. In order to compare
costs you must calculate the
actual amount of meat you will
get from a side and the price per
pound you will pay for it. To help
you do this, send for the,
Agriculture Canada folder "Beef
Cuts". It contains a handy chart
giving the approximate yield from
a Canada Al or B1 side. For your

and Mrs. Randy Ives and Wendy,
at Staples,-Ontario.
Mr. and Mrs. Bill Taylor and
family of Kintail spent Thanks-
giving Monday at the home of her
parents, Mr. and Mrs. Rolly
Achilles.
