directly from the grinder onto the
meat trays, has very, brief
exposure to air before it is
covered with more meat and then
tightly packaged. Wrapping
materials are specially selected to
let oxygen through (but not
moisture).

Consumers have recently
expressed concern over the
differences in color sometimes
seen in ground beef sold by the
package. Food Consultants with
Agriculture Canada point out that
consumers do not have to worry.
This variation is perfectly natural
and not due to the addition of food
colorings or dyes.
When beef is freshly cut it is
dark purplish-red, however this
changes to a bright cherry red
when the meat is exposed to
oxygen. The reason for this color
change lies with myoglobin: one
of the pigments found in the
muscle of meat. Myoglobin
undergoes a chemical change and
becomes a bright red color when .a
cut surface of meat is exposed to
air.
What colour should
ground beef be?
