Food Consultants with Agriculture Canada point out that consumers do not have to worry. This variation is perfectly natural and not due to the addition of food colorings or dyes. When beef is freshly cut it is dark purplish-red, however this changes to a bright cherry red when the meat is exposed to oxygen. The reason for this color change lies with myoglobin: one of the pigments found in the muscle of meat. Myoglobin undergoes a chemical change and becomes a bright red color when .a cut surface of meat is exposed to air.
