cucumbers are making their first
appearance of the season on the
market now. This refreshing
vegetable should continue in good
supply until mid October say

Most cucumbers sold at retail
are,Canada No. 1 Grade. Select
cucumbers that are well shaped,
firm, fresh and bright green in
color. Avoid those that are
withered or shriveled as they are
often tough and bitter.
Overmature cucumbers usually
have an overgrown, puffy
appearance.
Wash the cucumbers to remove
dirt, wipe dry and refrigerate in a
tightly closed plastic bag or
container. Don't peel or slice
them until ready to use. They will
keep in the refrigerator for up to
10 days but should not be frozen.
The most popular way to serve
cucumbers is raw - in fact few
consumers know taht cooked
cucumber can be delicious. Some
successful ways to serve them
raw are in salads, appetizer s,
relishes and sauces.
