Lite Bite added to Waiton Bright primary colours and a whimsical design have added gaiety to Walton’s main street, with the welcome addition of the new Lite Bite Restaurant which opened August 16. The business is owned and operated by Ed and Tammy Chalmers and their son Joshua, 9, who moved to Walton from Mitchell last May, and have been renovating and preparing the new eating place ever since. The building, known as the old Doug Ennis Store, has been vacant since the last tenant, Smith’s General Store moved away a few years ago. The Chalmers have done all the renovations and decoration them selves, with the help of a friend, Steve Cunningham, from Monk ton. Mrs. Chalmers (and Joshua) bear the main brunt of running the business at the present time, since Ed still works full time plus overtime at a Stratford engine parts manufacturer, often as much as 18 hours a day. Still, he manages to do all the new eatery’s baking, specializing in home-made tarts and pies, with plans to expand later into muffins and puff pastries. At present, the Lite Bite serves only sandwiches, hamburgers, subs and fries, but early in September will expand the menu to include full dinners at noon, highlighted by Mrs. Chalmers’ home-made soups. Later, it will expand again to include a full menu, with home style pizza and full breakfasts being featured. Coffee sells at only 35 cents per cup, a price that the Chalmers will try to hold for as long as possible andthe restaurant is open 8 to 8 Monday to Thursday, 8 to 10 Friday and Saturday, and 10 to 8 on Sunday. * ‘ Walton is a great place to live’ ’ says Mrs. Chalmers. “It’s a nice, friendly town, but people still respect your privacy, which is just the way we like it. We just love it here.” The family lives in the apartment over the restaurant. Busy as their schedule appears, both Chalmers still find time to work at other sidelines; Mrs. Chalmers makes and sells silk flower arrangements, aswellas acting as a wedding consultant, while Mr. Chalmers is involved in candidweddingphotography, a secondary business he has had since grade school. Later in their careers, the family hopes to expand their venture to include a photography studio and wedding consultant business, in the build ing beside the Lite Brite, which they also own.
