Sheilla and James Wallace from Toronto are the new owners of The Blithe Spirit Tea Room that reopened in Blyth on Saturday. The couple and their family will operate the tea room during the summer months. Blyth Legion team wins at Seaforth New owners at Blithe Spirit BY MELD A McELROY Last Saturday was an extremely successful day for the Blithe Spirit Tea Room’s new proprietors - Gary and Sheilla Wallace, formerly of Toronto. Sheilla is a member of a family experienced in culinary art. Her grandmother was a dietician for years for the Board of Education in Toronto. A distinctive feature this year in the dining room is additional china dishes which have belonged to four generations in Sheilla’s family. Sheilla says she loves to bake. On the dessert menu last Saturday were chocolate and lemon cheese cake - her specialty, apple crisp with whipped cream, rhubarb custard pie, and two kinds of muffins - fresh blueberry and banana chocolate chip. For lunch, one had a choice from three entrees: fresh turkey salad with pineapple and walnuts; plough man’s lunch consisting of assorted cheeses, white turkey breasts, green tossed salad and bread and butter; and tuna on brown bread with coleslaw. During the remainder of the summer and the fall, on the light lunch menus will appear a wide variety of nutritious foods, for Sheilla believes that * ‘variety is the spice of life.” After-theatre dessert and coffee will be served from 10:30 p.m. When asked about the Wallace’s first impressions of the village, Sheilla was quick to reply that they have found not only their guests but everyone they have met so far courteous and gracious. She added, ‘‘We have been overwhelmed by the generosity of the business people who have, with words, flowers and gifts, made us feel welcome in Blyth. ROLLER SKATING WEDNESDAY NIGHT 7:30 ■ 9:30 P.M.
