How to store home
made pickle products
Li ned up on the counter before
you are your home pickled
products, your work in the kitchen
completed! But, before you sit
back and admire your handiwork
remember an important part in
producing good quality pickled
products still remains - proper
storage.
Food Advisory Services,
Agriculture Canada offers these
tips on successful storage:
pickles may be stored in
sterilized glass jars or, for dills
or nine-day pickles, in home
canning crocks. Use only per-
fect jars or crocks - discard
chipped or cracked ones.
- jars should be washed in warm
soapy • water, then sterilized in
the oven at 225°F for 10 minutes
or boiled in water for 15 min.

boil for 3 to 5 minutes, according
to manufacturers' directions
- some pickles, relishes and
sauces tend to discolor if packed
in unsealed jars. Glass jars
specially designed for home can.,
ning are airtight and should be
used when recommended in the
recipe.
- if pickles are left in crocks they
should be well covered with
the pickle mixture to prevent
spoilage. A plate or wooden
board cut to fit inside the crock
should be placed on top of the
pickles and weighted down.
- wipe the jars with a damp cloth,
taking care not to disturb the
screw band and label and date
each jar.
- store pickle'd products in a cool,
dark, dry place. A warm storage
area may lead to flavor deterior-
ation. Light can cause changes
in the color of stored food. If the
storage area cannot be kept
dark, wrap each jar in paper or
place in boxes to keep the light
out.
• avoid storage areas whe're there
is a risk of freezing. This can
cause jars to crack or can spoil
the „texture of some products.
- store pickled products upright
to help eliminate the possibility
of leakage
- few homes have adequate
storage space for quantities
larger than a year's supply and
most products can be
replenished each year.
As a final note - after one week,
recheck each jar for any signs of
leakage and sp oilage. If there is,
the food must be thrown out.
Otherwise, prepare to enjoy your
handiwork in the months to
come.

'Attend first Region 3 I Washing Dishes . Is A
residents conference I
Seven residents attended a two day conference at the
Sunnyside Home, Kitchener, last week. This is the first
residents' conference that has been held in Region 3.
The theme being opportunities for a meaningful life in a
Home for Senior Citizens and was .puite successful.
The. Old Tyme music and sing-a-long program was
held in the normal care sitting room on Monday
afternoon. Elsie Henderson, Myrtle Parker and
Norman Speir provided the music and the Christian
Reformed volunteers assisted with the activities.
The Family Night program arranged by the Howard
Smith orchestra of Brussels was rated by the residents
as one of the best. Howard Smith plays banjo and
saxaphone, Albert Craig is soloist and guitarist of the
orchestra and Archie Mann plays violin and banjo.
Elsie Henderson and Norman Speir joined the group to
provide a very enjoyable hour of old tyme tunes and
waltzes. John McCallum thanked the entertainers on
behalf of the residents..
The Clinton Kinette Club entertained their adopted
grandmothers at the Little Inn, Bayfield on Tuesday
afternoon. The forty grandmothers travelling by cars
provided by the Kinettes and the van took the scenic
route over to Bayfield and were treated to a delicious
tea in the dining room of the Inn. Many thanks to the
Club and the Little Inn for their hospitality.
Mrs. Meston and Mrs. Ellis were welcomed to the
Over 90 Club at the September meeting. Thirty
members ,enjoyed an hour of music with tea and
cookies served by the Walkerburn volunteers and Miss
Reta Yeo. Mrs. Elsie Henderson and Nelson Lear were
guests of the club and entertained with a vocal duet, a
piano duet by Mrs. Meston and Mrs. Henderson and
led sing-a-long.
The residents are looking forward to the annual
scenic drive sponsored by the Ontario street and
Wesley Willis United Churches on Sunday, October
17th.
Plans are being made to hold a volunteer rally in the
auditorium of the Home on Wednesday evening
October twenty-seventh. It is hoped that the regular
volunteers and anyone who is interested in helping at
the Home in any way will try and come.
