Serve it in wedges to accompany corned beef as the familiar "boiled dinner". Use the leaves as a wrapper for a savory meat mixture in cabbage rolls, or shred it and add it to soup. If you are cooking cabbage, do so quickly. If cooked only until tender-crisp, cabbage retains much of its original, delicate flavour. Shredded cabbage requires only 6 to 8 minutes, wedges 10 to 15 minutes. When cabbage is done, season. with salt and pepper and add one of these for variety - grated cheese, sour cream, caraway seeds or curry. For use in salads, cabbage may be coarsely grated or shredded with a knife.
