- orange jelly powder.
1 cup boiling wat
V4 cup syrup from fruit
% ,cup chopped red apple
Drain 4tnd chop fruit, reserving.
syrup. Dissolve jelly powder
water and add syrup from fruit..
Chill until partially set. Fold in
fruit. Chill until firm. 6 servings,.

friends and neighbors for all their
acts of kindness during her stay in
the Callendar Nursing Home, and
at the time of her death. Special

Look for a label that lists calories
per- slice, instead of per loaf.
Certain hard cheeses made
from partly - skimmed milk are no
lower in calories than other hard

So read the fine print on those
labels. Don't pay extra pennies
for dietetic foods unless you're
Last fall was an especially busy
time for Canadian canneries. The
rush was on to preserve the large
crop of fruits, just at the peak of
goodness, to tide us over the long
winter months. Now we can
benefit from their industry and
take advantage of the good,supply
available.
Most processed fruit in Canada
is sold by grade Canada Fancy,
Canada. Choice or Canada
Standard.. Grading is based on
criteria such as flavor and aroma,
color, tenderness - and maturity,
uniformity of size and shape,
consistency, and freedom from
defects and foreign material.
Canned peaches- sold in halve
or slices are • mostly Canada
Choice grade. There are two
types. The flesh of the .Canadian
"Freestone" , peach separates
easily from the stone. In
, • the imported
'Clingstone" peach has a. stone
which adheres to the flesh. The
grading system applies to both
types but only thOse packed in
Canada have the,word "Canada"
as part of the grade name on the
label.
Canned pears .are . also sold -in
halves and- quarters. The
"Bartlett" pear has a yellow skin,.
a fine juicy flesh. and a delicate
flavor which make it a preferred
pear for canning. Another pear
used especially for canning is the
"Kieffer".This Autumn variety 'is
yellow in color with , a granular
crunchy texture and is packed
under the label "dessert pears".-

• Take your pick of either
sweet or sour cherries. use them
in puddings, pies and compotes.
Or try a combination of -prepared
fruits. Canned . "Fruit Salad''
contains larger pieces of fruit
than "Fruit Cocktail". These
fruits can add variety to many

alternataive to fresh fruit salad.

guilty after consuming rich
caloric-laden foods. . To
compensate for eating binges,
ihey may turn to "dietetic
foods", in hopes that these foods
will help them slim down. Be
-wary that you don't fall into this
trap. Read the labels carefully for
J11 diet foods are hot necessarily
low in calories.
Diet foods arc controlled by
strict regulations. They can be
labelled "calorie reduced" only if
.hey contain no more than 50% of
the calories found in the foods
they replace. Low calorie salad
itessings fit this category.
A "Sugar-free" food may
contain no more than 25%
available carbohydrate. It's still a
mood idea to compare calories: For
tAample, “sugat-ftee". ice cream
ntade from whole milk may have
more calories than tow-fat ice
milk that is Sweetened with
sugar..
Some products are simply
"carbohydrate reduced". Canned
peaches, for instance, .can't be
"sugar-free'' because the
peaches themselves contain
sugar, But if they're labelled
"carbohydrate reduced!'",, this
meatis the sugar used in tanning
has been reduced or left out,
'Dietetic" peanut butter is
