Many ground beef recipes can easily be doubled to feed a crowd. Dishes like chili con carne, meat balls and meat sauce for spaghetti all freeze successfully and can be reheated as you need them. If you are freezing one of these main dishes for family use, be sure not to overcook it„ To speed ,:ooling, place the pans of food in cold water. Choose a suitable container size for freezing: If you have a limited number of baking dishes, line the dish with" foil before adding the food. Cover tightly and freeze, then unmold, rewrap and return the food to the freezer. Be sure to freeze foods immediately. Freshly cooked ground beef dishes may be frozen for three months at 0 degrees F or lower. After this period, the quality of food may decline in flavour or appearance. Borrow this "Chili Con Carne" recipe from the far away Latin Americans. The chili is surpri- singly quick to prepare and tastes as if it has been simmered for days. If you want to make a double batch, it is best to cook the meet in two lots and then combine with the rest of the ingredients. To creat your own Latin atmos- phere dine late, cover your table with a bright table cloth or woven mats, use clay jugs and casseroles.
