Cook extra
vegtables
for soup
For cooks who hate to spend
time in the kitchen or for those
whose time is precious, the ideal
dish is one that tastes like
something that took hours to
prepare yet, with a little bit of
planning, can be done in a few
minutes.
Here's a recipe that does just
that. Cook enough potatoes and
rutabaga for supper one night, as
well as enough for the soup.
Either make the soup while you
'prepare the rest of your meal or
refrigerate the vegetables and the
reserved water',_ and finish
making the soup a day or two
later.
Potato and Rutabaga Soup
4 cups peeled and cubed rutabaga
(1/2 medium)
3 med. potatoes, peeled and
cubed (2 cups)
1'/2 tsp. salt
21/2 cups water
1 small onion, thinly sliced
2 tbsp butter
1% cups milk
2 tsp. brown sugar
Dash nutmeg
Dash pepper
In medium saucepan, cook
rutabaga and potatoes in boiling
salted water until done (20 to 25
minutes). Do not drain, Mean-
while, saute onion in butter until
transparent; set aside onion. Add
milk, sugar, nutmeg, pepper and
reserved onions to cook potatoes.
Whirl mixture in blender until
Smooth, or put through a sieve.
Return to saucepan; cover and
simmer for 5 minute to blend'
flavors. Makes 51/2 cups,
