But there are appealing, yet economical festive foods your family and guests can enjoy. One of the most traditional desserts is mincemeat. Whether you buy it canned or 'make it up or extend it. Why not consider instead some fancy yeast breads made with sweet dough, or decorated bars and cookies. Serve with a rum or hard, sauce. Makes about 11 cups. For something a little easier on the budget, but still very special, this 'Holiday Pudding" is perfect. Grated carrots give it a bright cheerful appearance while orange rind and ginger provide a delicious zest. Warm from the oven, it is great with an orange or custard sauce. HOLIDAY PUDDING 1/4 cup butter 1/4 cup brown sugar 1 beaten egg 1 cup grated carrot 1 tablespoon grated orange rind 3 tablespoons orange juice 1 1/4 cups sifted all-purpose flour 1/4 teaspoon baking soda 1 teaspoon baking powder teaaspoon salt 1 teaspoon ground ginger Cream butter and gradually beat in sugar. Add egg and beat until fluffy. Stir in Carrots, orange rind and juice. Sift remaining ingredients and stir into.creamed mixture. Spread evenly in a greased 8-inch square pan and bake in a 350 degree F oven until a skewer inserted comes out clean, about 30-minutes. Serve warm with sauce. 6 servings. B210S 2 door sedan 527-10'10 CUSTARD SAUCE 2 eggs or 4 egg yolks 1/2 cup sugar 1/8 teaspoon salt Va- 1 cup skim milk powder 3/4 cup cold water 1 cup hot water 1/2 teaspoon vanilla Beat eggs. Add sugar, salt and skim milk powder and blend with cold water. Gradually stir in hot water. Cook over hot water, stirring until thick enough to coat a silver spoon. Immediately remove from heat. When cool stir in vanilla. Makes 2 % cups. GOOD FRUIT CAKE (makes 4 loaf pans) 1/2 lb. peel 1/4 lb. cherries 1 lb. currants 1 lb. dates 2 lbs. raisins 1 lb. large raisins 1 lb. light sultanas Soak overnight in juice of 1% grapefruit. Next day sift 6 cups flour 1 tsp. nutmeg 2 tsp cinnamon 1 tsp. cloves Put this on the fruit. Mix 1 lb. butter 2 lbs. brown sugar 9 beaten eggs. Add floured fruit alternate! with 1 cup strong coffee, 3/4 c molasses - add 1/2 lb. almond and 1/2 lb. walnuts. Lastly add 1 tsp. soda in V4 c, boiling water. Line pans with greased brown paper. Bake for 4 hours at 250* oven with a pan of water in oven. Keep adding cold water. GUMDROP CAKE 1 lb. gumdrops cut up (no black ones) - 1 lb. large seeded raisins in '/3 c. water ,Steam 5 min. then cool) 1 cup w. sugar 1 c. butter. Cream the sugar with the butter and add 1 c. sifted flour. Add 2 cups sweetened applesauce and the raisins. Lastly add 2 cups flour, salt and 2 tsp. Baking powder. Put flour on gumdrops then stir all together. Bake 2750 for 2% hours. Use 9 x 13 pan. Seetilotth gr▪ a M▪ IN ONO
