Jesse James strode into the
Dodge City cafe,- sat down in front
of, a red and white checked
tablecloth and demanded "Your'
thickest slice of toast beef -
RARE!". The waitress hurried to
the kitchen scribbling the order as
she went.
The filling of that order may
have determined the life
expectancy Of the cook especially
if' Jesse was in an "ornery"
mood.
Today it is much easier to take
the guesswork out of cooking beef
to rare.
To most people rate beef is rose
red - not light pink as in medium,
or brownish-grey as in well done.
However, rare also corresponds
to an internal temperature as
recorded on a meat thermometer.
Hostesses were: Mrs. Jim
Axtmann, Mrs, Ken. McDonald,
Mrs. Jan V an Vliet Jr., and Mrs.
Emerson Mitchell.
The next euchre is set for
Friday evening, November 14.

Mrs. Florence Chapman has'
taken up residence at her home
in the village. She is formerly of ,
London, We welcome her to our
community.
Mrs. Nelson Reid was among
those who visited Mrs. Leila
Dundas last Wednesday after-
noon at. the Seaforth Manor, on
the occasion of her 88th birthday.
Roasting beef to this temperature
results in rare beef.
Just insert the thermometer in
the meat so that the tip is 'at the
centre of the thickest part of the
roast and away from bone or fat.
Roast' to 50° to 60° on the
Celsius Scale.
This range of temperature is
given to cover variation among
the different cuts. A tenderloin or
eye of rib roast is rare 'at 50°C
while a rump roast is more
acceptable for rare at 60°C.

Gordon McGavin returned home'
from Victoria Hospital and Mrs,
McGavin from University Hospi-
tal, London on Friday. We wish
them continued health.
Miss Ruth Thamer was hostess
for a Halloween Party in the
community hall on Friday evening
She was assisted by her sister
Pauline Gut utzen and Rev. Ed
Baker who brought his compon-
ent set and along with records
brought by the Grade 8 and 9
students, dancing was enjoyed,
from 8:30 til 11:30 p.m, Chips arid
pop were available for lunch.
From all reports it was very
successful, -and was good enter-
tainment for Halloween night and
is hoped to have another one in
the next holiday season.
Mr. Don McDonald met with an
unfortunate accident when he was
caught in the power take-off while
working at turnips. After X-rays it
was found he had a bone chipped
off his shoulder and possible
broken ribs. He is able to be out
at work as usual.
The Crossroads Restuarant has
been sold to Mr. and•Mrs, Bright,
former owners of the Texan Grill
of Brussels. They take possession
on November 15th.
Mr. and Mrs. Campbell Wey
have arrived home from a 10 day
motor trip to. Erickson, Manitoba
where they visited at the home of
his sister.
