Apples may be frozen quite
successfully, Choose firm, mature
apples. For use in pies and
puddings, wash, peel, core ands
slice, To prevent discoloration,'
use 1/8 teaspoon powdered or
crystalline ascorbic acid, or 500
milligrams in tablet form, for 2
cups prepared fruit. Dissolve
ascorbic acid in 2 tablespoons
cold water, sprinkle over fruit and
mix gently. To 2 cups apples add
2 tablespoons sugar and mix
lightly to coat pieces. Pack in
freezer containers or bags. If
desired, make into applesauce,
with or without sugar, pack cold
and freeze.
Here is a quick trick in
preparing your favorite apple
pies. Wash, peel and slice enough
apples to make one pie. Add the
usual amount of sugar and one
'third more thickener. (If you
normally use 3 tablespoons flour,
then use 4 tablespoons in' this
case.) Mix sugar, fruit and flour
until the sugar dissolves. Freeze
in aluminum pie plates, cover
with alumirtum foil and seal. To
prepare the pie, do not thaw fruit,
place in unbaked pie shell, add
spices and dot with butter if
desired. Cover with pastry, seal.
edges and cut steam vents. Bake
as usual.
