Services, Agriculture Canada.
- Buy spinach with fresh,. crisp,
clean leaves.ofgood.gren color.
Discard -any yellow, soft or
withered leaves. You will need,
two pounds of bulk spinach for 6.
servings, or two 10-ounce bags:
- Wash bulk spinach first in luke:
warm water then cold to remove
all the - sand. Bagged spinach
needs only a quick rinse -under
cold water. Shake leaves to
remove excess water. Whatever

Place spinach in saucepan and
do not add water: ' Add 1/4'

CHINESE SPINACH
1 cup thinly sliced onion
1 clove garlic, crushed
3 tablespoons butter
I tablespoon cornstarch
1/8 teaspoon pepper
4 teaspoons soy sauce
2 10-ounce packages spinach or
2 pounds bulk spinach
1/4 teaspoon salt
Saute onion and garlic in butter
until onion is transparent.
Combine cornstarch, pepper and
soy sauce and add to pan. Stir and
cook until thick and clear. Cook
spinach in salted water until just
wilted (1 to 2 minutes), Make
several criss-cross cuts through
spinach With sharp knife, then
drain thoroughly. Potir sauce over
spinach and combine. 6
