'ORCUPINE BEEF LOAF - Meat loaf is an economical and satisfying mainstay for
/inter meals. Ingredients can be varied each time it's made and it can be made in
'ifferent shapes and sizes. For an eye-opener, try this unusual "Porcupine Beef
.oaf" from Food Advisory Services, Agriculture Canada. Rice, combined with
round beef, gives it this special porcupine look.

me of the family favorites that
ou can make this week with
ittractively priced ground beef.
You may prefer to buy the
"moderately lean" or "lean"
ground beef as there'll be less fat
to drain off.
Beef loaf is simple to make and
an be baked with potatoes, a
cgetable dish and a pudding for
complete oven supper. You can
also make it the night before and
reheat it the next day or serve it
:old with a salad for lunch.
ingredients and seasonings may
be varied to suit your taste and it
may be served with a sauce. The
liquid may be milk, beef broth,
tomato juice, chili sauce or
catsup. The added cereal may be
rolled oats, rice or bread crumbs.
Food Advisory Services,
Agriculture Canada suggest these
two recipes. "Old-Fashioned
Beef Loaf" that's everybody's
favorite, or the more unusual
version, "Porcupine Beef Loaf".
The latter is made with rice which
gives it the "porcupine" look and
it is round in shape.

Porcupine Beef Loaf
1/2 pounds ground beef
'2 cup uncooked rice
2 cup chopped onion
1/2 teaspoons salt
tgeaspoon pepper
teaspoon dry mustard
teaspoon oregano
2 teaspoon thyme
teaspoon Worcestershire sauce
cups beef bouillon
2 tablespoons flour
tablespoons water
Combine beef, rice, onion and
-.easonings. Add 1/2 cup beef
i bouillon and shape into round
!oaf. Place in deep baking dish
and pour remaining 11/2 cups
bouillon around loaf. Cover and
.hake at 325°F until rice is tender

meeting was read by the

and thick. Serve gravy with meat
loaf. 6 servings.
Old-Fashioned Beef Loaf
2 pounds ground beef
•Y4 cup rolled oats
1/2 cup finely chopped onion
2 teaspoons salt
1 /4 teaspoon pepper
1/8 teaspoons savory
1 beaten egg
1/4 cup milk
2 teaspoons Worcestershire sauce
Mix beef, rolled oats, onion and
seasonions. Combine egg, milk
and Worcestershire sauce. Add to
meat and blend well. Turn into 9 x
5 inch loaf pan or ring mold and
hake 1 1/2 hours at 350°F. 8
4-ounce servings. Serve with a
sauce if desired.
individual Meat Loaves: Shape
mixture into about seven 6 ounces
"oaves. Bake on cookie sheet 30
minutes at 350°F.
Quick Mushroom Sauce - Heat
.me 10-ounce - can condensed_
cream of mushroom soup with 1/2
,:up milk. Serve with beef loaf.
Barbecue Sauce
1/2 cup chopped onion
1 clove garlic, crushed
ltablespoon fat
1 cup catsup
1/2 cup water
/4 cup brown sugar
2 tablespoons Worcestershire
Sauce
I teaspoon salt
2 teaspoons prepared mustard
Dash tabasco
Saute onion and garlic in fat
until onion is transparent.
Combine with remaining
ingredients. Sit/inlet 5 to 10
minutes, Makes 2 cups, Serve
with beef loaf:

the outside work of the church is
to be done this year and further
financing of chimes will be
considered. Mr. Docken thanked
those who sent in their reports
and .ot the ones that did the
typing. This was followed by the
treasurer's report.
Mr, Docken asked all to stand
when a moment's silence was
observed in memory of those who,
had passed away during the past
year.
Elders to the session to retire
this year are Stewart McCall, Ken.
McDonald and Emerson. Mitchell
with new replacements to be
nominated. Stewards to retire
this year are Murray Dennis,
Gerald Smith and Mervin Smith.
Plans were made with discus-
sion and comments to celebrate
the church 'union of 50 years on
Jurie 8, 1975; (just before the date
Union, June 10, 1925). It will be
an Anniversary Party with a
suggestion of a guest speaker,
also including:. decorations,
banners, birthday cake, candle
lighting, pictures of past mem-
bers and events on display,
special music and lunch after
morning church service. Several
volunteers offered to help.
All organization reports were
given. Mr. Docken stressed
thanks to the U.C.W. for all their
good work. The •U.C.W. is to
appoint a representative to the
Manse Fund.
Mr. Briggs from. Campbellville
was in attendance and spoke on A
Church Directory. It was agreed
to go ahead with the project and
pictures for the directory would
be taken at a later date. Every
name and telephone number of
each family will also be listed in
the book.
It was voted to cancel church
services while the minister is on
holidays, which will be known at a
later date.
Don McDonald expressed a
vote of thanks to Mr. & Mrs.
Docken for their help during the
past year and Mr. Docken replied,

the weekend in Waterloo with
Mr. & Mrs. Wolfe Stuts and
'Natasha.
Mr. Keith Clark spent the
weekend with his father James
Clark and sister Ann.
Allison and Leslie Traviss are
spending a couple of weeks with
their grandparents, ,Mr. & Mrs.
Herb Traviss while their parents,
Dr. and Mrs. Brian Traviss of
Kitchener are holidaying in
Florida. Mrs. Hilda Sellers of
Seaforth is also visiting at the
same home.
