Rules for
meat storage
Keep it cool; keep it clean;
keep it covered. Follow' these
simple rules for the handling and
the storage of meat, and you'll be
sure of wholesome food with.
maximum flavor.
— Refrigerate meat as soon. as
possible after purchasing.
—Remove store paper and
transparent wrappings' from
meat before storing.
—Fresh roasts should be wiped
with a damp cloth, placed on a dry
plate and covered loosely with
waxed paper. They will keep two
to three days.
—Ground meat should be used
within two days of purchase
while smoked or cured meats
such as ham and bacon should
be used within 1 week.
—Poultry should be covered
loosely with waxed paper and
cooked within two to three days.
If giblets are enclosed in the
neck or body cavity, remove
them and store separately as they
spoil more rapidly than the rest
of the bird.
—Unopened vacuum-packed
meats such as frankfurters,
bologna, salami and ham will
keep safely for 5 to 7 days in the
refrigerator. Once the package is
opened, use immediately.
—Steaks and chops will keep two
to three days while variety meats
such as liver, heart, kidney and
tongue should be used within a •
day. Jellied meats should be
kept' no longer than two days.
—Cooked meats should be
cooled, then tightly covered to
prevent drying ' out and
absorption of odors. They .will
keep three to four days.
—Cooked poultry may be stored
in a covered container, a plast. is
bag or aluminum foil in the
;refrigerator for., three to four
days. Remove the stuffing from
the bird and store it separately.
