'- Estmwesseb 1472 Egg liqueur is a Dutch Christmas • treat The Dutch are famous for their egg liqueur called Advocaat. It is thick and creamy somewhat like an eggnog. Served in small glasses it is usually sipped from a spoon rather than being. drunk. The liqueur, we are told, was developed as a result of early Dutch traders' fondness for an East Indian drink made with avocados and brandy. Unable to get a plentiful supply of this fruit in those early days in the Netherlands, the resourceful Dutch experimented until they developed a suitable substitute. They called the resulting liqueur "Advocaat". Probably there were many homemade versions of the Commercial liqueur and we find versions of it among the traditional /treats served in. many German Wales. Though it is not as thick as the real Advocaat, it is considerably less expensive. It is nice, served in little liqueur glaSses with a piece of, fruit cake for drop-in guests, or it may be served as any liqueur with after dinner coffee. RUDI'S EGG LIQUEUR 1 package "Vanilla Sugar"* 1 quart milk 10 egg yolks 1 pound sugar 12 to 16 ounces potable alcohol Beat egg yolks and vannia sugar. Bring milk and sugar to boiling point, stirring constantly until sugar is'dissolved. Remove from heat. Stir some of hot milk' into egg yolkS, /then stir back into remaining milk. Return to . medium heat, stirring constantly . until first bubbles begin to appear. DO NOT BOIL. Should mixture accidently boil and curdle, place pan at once in, container of cold water and beat with rotary beater. Cool custard mixture and add , alcohol. Blend thoroughly. Pour into sterilized bottles for which new corks have been purchaed. Soak corks in voiled water to moisten. Lay bottles on sides in cool dark place to age for two weeks before using. Serve in , stnall liqueur glasses with after dinner coffee. *Speciality counters carry vanilla sugar; or store vanilla bean (available at drug store) in 2 cups of sugar in covered jar for week or longer. ** A package of — vanilla sugar is equal to 11/2 teaspoons of vanilla flavoured sugar.
