People on fixed incomes are having..a difficult time making ends meet._ If the price rise continues, the time may come when many of us will not be so choosy and will be glad to eat anything that is healthful and a reasonable price. Not so many years ago the crystal clear water of the Mait- land River in Brussels,, both above the dam and west of the bridge, were favourite swimming spots. Now anyone concerned with their health and pollution would think twice before taking a' dip in our, once sparkling river. Pollution, however, did not deter a mother duck taking her young ducklings 'on the river one morning la* week. They were seen disporting themselves on the Maitland east of the bridge with apparent enjoyment with mother duck in, careful supervision of their activities. * * * * Many of our villagers find a problem on, their hands when they have rubbish, such as that left when they have had repairs made to their buildings ' etc., to dis- pose of. -Much of this type of thing can not be included in the regular garbage-collection. They have to locate someone with a truck who ist willing to pick it up. and haul it away. Finding such a person to do the job can be difficult. Paying to have it done can be costly these days when money seems to vanish with amazing speed when' providing even the necessities of life. • * * * * * * The weather smiled on the then's softball tournament held here over the weekend when 16 teams battled it out in 22 games. It created a great deal of interest and excitement. These tourna- ments are good for our,village. Raspberries and blueberries are two very popular candidates for jam making. However, too often we overlook the little red and black currants which make delicious jams and jellies alone or in combination with other fruits. If there is not enough time now to make jam from the fresh currants they may be frozen for use at a later time. Whole currants should be washed and . For jelly making the juice may be extracted from mature currants and frozen. RASPBERRY AND RED CURRANT JAM 4 cups raspberries (1 quart) 4 cups red currants (1 quart) 6 cups sugar Remove currant sterns. Combine fruits and crush. Add sugar, mix well and let stand . Overly ripe cucumbers are not appealing. Avoid those which are yellow 'in color and large and plump. Bring to boil and boil rapidly to jam stage, (about 20 minutes).. To test, remove from heat, pour a teaspoon of jam on chilled plate and chill quickly. If jam does not set, boil A few minutes more, then test again. Remove from heat and skim. Stir 5 minutes; pour into hot sterilized jars and seal. Makes about 8 cups. wilted. .
