Meiser, director of the Laboratory. "The Centrals Milk Testing Laboratory, estalished in 1966 is a computerized electronic sys- tern capable of analyzing milk for all its components, including prdtein and lactose", says Dr. Meiser. "The Laboratory has, provided Ontario with a know- ledge of • milk that -exists now- where else in the world." Using the infra-red technique, milk from more than18,000 dairy herds in Ontario was analyzed for' butterfat, protein, and lac- tose, every two weeks over a three-year period. The butterfat content from individual dairy herds -can vary four points or more' during a year, with.the low point usually being in July or August. Protein leVels in milk, on the other hand, usually go up sharply in June, ;refledting the abundance of •lush pasturage and field chop- ped grasses. A decline in pro- tein levels was ,recorded from March through. May:•• This was attributed to the number of cattle freshening 'in Ontario dairy herds •it-this time of year. Both the lactose levels and the solids-not-fat content - the com-• bined protein, lactose, and mineral components - remained relatively constant. Dr. Meiser advises cheese manufacturers to pay more attention to the protein and butterfat values in their milk supplies than to the solids-not- fat levels. ' The study also showed that it is normal for the total solids content - the combined butter- fat, protein, lactose, and mineral levels - to vary not more than one-half percent in one year. " To compensate for the low protein levels in Ontario's indus- trial milk supplies in certain months of the year, Dr. Meiser recommends that Cheddar cheese plants adjust the ratio of protein tb fat of incoming raw milk supplies, ',either by standardizing with skim milk powder or by removing butterfat. The arithmetic mean for the butterfat content of milk taken • from Ontario dairy herds during the three'years of the study was 3;63% in 1970, 3.58% in 1971, and 3.57% in 1972. The protein content was 3.13% in 1970 3.22% in 1971, and 3.16% in 1972. The lactose arithmetic mean was 4.69% in 1971 and 4.68% in 1972. A diSplay of the “SportSwear for SUmmer" was a credit to those who made them. One of the girls made an artistic banner depicting "The Miss Teen Canada Pageant,". some of the girls pre- sented a skit of the ten provinces each one making a commentary Plaques and banners represented were New Brunswick, Quebec, Newfoundland, Manitoba, British Columbia and the North weSt Territories, Nova Scotia, Saska- tchewan and Ontario.
