project are getting plenty of blapk,

Since June 11 team members
have visited twenty-six municipal
clerks, librarians, newspaper of-
fices and presidents of historical
societies to try to find out what
records do or do not exist in
the county.
The project, under the super-
vision of James Scott and co-
ordination of Bill Jeffery, Exeter,
is to update the history of Huron
County from 1900 to 1975. It
is financed by the Ministry of
Education's "Experience 73"
P.E.O.P.L.E, program with
Huron County Council meeting
additional expenses. Student

Tips for
taking care
of fresh
strawberries
Each June, the all too brief
appearance of Ontario straw-
berries raises the question of
how to keep this precious fruit.
Food specialists at the Ontario
Food Council,
Strawberries store well in
your refrigerator, but for -2 to
3 days only, so bey only the
amount that can be eaten within
that period of time. Wash and
hull the berries when ready to
use. .
Before refrigerating, remove
the berries from the box, lay
them on a tray or paper towel
and pick out overripe ones.
Store the tray of berries,
uncovered, in the refrigerator.
Why, you may wonder un-
covered? Well, circulating air
prevents moisture build-up and
discourages the growth of mold
on the berries.
when ready to use the,berries,
give them a quick cold bath;
let the sand fall to the bottom
of the basin, then lift the berries
from the water using your fingers
as strainers. Roll lightly on a
paper towel to dry, then hull.
The secret to successful
strawberry storage is to bey the
amount you can use within 2 or
3 days, spread them out in the
refrigerator, wash, and hull only
when ready to use.
