Despite the fact that the law to protect
cheese and butter manufacturers is pretty
rigid and that the instruments for detecting
the adulteration of milk are •Imam perfect,
yet there are ,suite • number of patrons of
oar cheese factors who aro willing to run
the risk and yield to the temptation to add
• little water or to take a little cream off the
milk before sending it to the factory.
The majority of these dellnyuena, how-
ever, are patroas of the newer factories or
of those factories where dairying has not
been made a specialty. Aa • rule, in those
factories where the farmer makes • boatmen
of dairying, there 5 not .o much difficulty
in securing the milk just se it comes from
the cow. The patron who understands the
dairy business is not going to run any reeks
by tampering with the milk. He realizes
that the Inspector is liable to be called in at
any time and that if he Is tined • time or
two the profits from the business will noon
be eaten up
Not so with the patron whoa supplying
milk for the lust time if he te inclined. to
