There are many dairiee where the loss of

cream is too warm when churned. The
extra time required to churn at the lower
temperature would be paid for many times
by the increased yield of butter, and it is
not always necessary that extra time should
be taken. The time of chnrning does
not depend altogether upon temper-
ature. Another Important factor is the
fullness of the churn. It will take above
twice as long to chnrn with a churn half
full as it would if it were only a fourth
