ENTERPRISE IN DAIRYING.
'('I1E wonderful devt•loptuent of the
dairying industry in Ontario is one of the
most striking features of our agricultural
progress. Twenty live years ago this prow.
ince imported cheese frons the State of New
York; today the cheese factories of Ontario
turn out in the sa•soa about $9.000.000
worth of cheese. Indeed, Canada hes Le -
come the greatest exporter of cheese of any
country in the world, the shipment to Keg
land alone bung 4t. rwr mut. of the chess
imported by that great consumer.
The advance along the line of worts
dairriag is steady. Factories and cream.' 1
experimenting in • wen way .port the ex
ended mllkiug season and continued nun
ufacture of dairy produce • success, The
silo and separator and the spread. of dairy
information are working • revolution in
(bolatio dairying method's.
These advances and improyementa add
thousands upon thousands of dollars to the
wealth ot the province, and much of the
progress can be directly traced to the
()otario Department of Agriculture, which,
by Its reports and bulletins, has for several
years put kept our agricultural population
posted on the newest, safest and best meth-
ods in dairying. Mr. Ukrocre. sitcoms haa
shown the wisdom of having • Department
devoted to agriculture placed in charge of •
practical and progressive farmer.
If any of our readers desire to lee
gbly posted upon facts and figures re
Ilatmg to the cheer and butter trade of this
rirovitrce they can find • mine of statistical
wealth in a Spezia' bulletin, entitled
" Dairying in Outario," recently trued by
the I►ep.•rtment, compiled, we understand,
by the able and wide-awake Deputy Minis-
ter, C. C. .'aria., formerly Chemist at the
Ontario Agricultural 1 oliege. The bulletin
proves from the market reports of the pact
ten years that while grain has declined in
value over 30 per cent in the decade, dairy
pricee have failed by less than 6 per cent.
It then shows by • carefully prepared table
that butter removed but the merest moiety
of fertility from the oral, and that it thus
preserves the fertility of the farm. Then it
paints out how well adapted Ontario is to
dairying. amid compares the steady increase
la the growth of the business with the de-
cline in the product in the United States.
The butter industry is also dealt with,
and many valuable taco are given regarding
its extent at home and abroad. A list of
&rids, 1 with price. comprising the plant of
a creamery, cheese factory, or both combin-
ed .re 1urnehed. A plan of • separator
creamery is given, and valuable hints are
offered as to how to start • cheese factory or
creamery. The Statute uyuoted is axone)
showiog how • Dairy Company may become
i.00rpr•ted together with the act e: pro-
vide against (made in supplying milk, and
other useful legal information.
This bulletin is • yule mecum for the live
dairymaa. In twenty-three pagan gives
him • digest of the dairy information of
scores of 1;overnments. And the best thing
about it is that it costa the farmers of the
country nothing. Any one writing to the
