Looking at poultry from the stand-
point of a market poultryman, the que -
tion assumes en entirely different aspect
Whether eggs or meat are wanted as a
specialty the size of the fowls and the
proportion of meat to offal mast always
be considered, as sooner or later the lay-
ing stock mast be disposed of on account
of age, and then the advantage of weight
is felt. In this connection s correspond-
ent of The Fanciers' Journal thus sums
up the matter. He says:
Take Leghorn*, for instance—verita-
ble egg producing machines. They will
certainly prove remunerative for time,
but when it is found necessary to renew
a yard on account of age 100 Leghorn'
will not average over four pounds apiece,
while Minorcan, just as good layers, will
average six pounds, and Light Brahmae
from eight to nips pounds. Again, the
rearing of 100 pullets will entail also the
rearing of about 100 cockerels, which
mast be disposed of as market fowls,
and then every additional pound in
weight means the price of one dozen
eggs. From the above it should be eraily
seen that Leghorn* are not the best fowls
for market poultrymen. A larger breed
is needed, even if the egg production is
to be reduced.
Light Brahma. are a good breed, the
main objection to them being their slow -
nes to put on flesh as chickens, making
them in consequence undesirable as
broilers. Minorcan make a splendid all
purpose fowl. but again in their case
something is wrong. As chickens they
are not sufficiently hardy to make them
as Mable as they should be, and es
fowls they softer greatly from seven
winters, which canoes their production
of eggs to be seriously affected. Lang-
ahans are good layers, have size in their
favor, and they are hardy, but they have
the Asiatic trait of maturing slowly,
which detracts somewhat from their
value.
The pure breeds at prevent rightfully
laying claim to thew title of all purpose
fowls are the Wyandotte' and the Plym-
outh Rock*, with the scales tipping in
favor of the last, owing to their greater
average weight and a alight superiority

full grown and overa year old are easily
fattened. While they would seem to fill
the bill they are not perfect. It kept in
their purity, they are liable to suffer
from the effects of inbreeding and to lose
much of their vitality and power of

then is the market poultryman to do?
He will begin by carefully selecting
for his breeding pens healthy, vigorous
pullet* of some large breed in order to
obtain the required size, Light Brahman
preferred, and mate them to Leghorn

In New York city straw le • regular
market commodity listed on the Prod-
uce Exchange the same ea hay and
graded and subject to the same ribs of
inspection. The prices at which it alb

there are not so many different grades
of straw as of hay, but all straw to sell

The beet rye straw usually sells far
about the price of the lower grades d
hay. There are two grades of this straw.
Some straw may be brought in loons, but
practically it is all baled. The reQmime-

baled. The bales of strew are .scall,
larger than those of hay, and few if any
are baled with the perpetual ; sewer.
