In the history of medicines so prepa•
ration has received each universal emu
eerily the more quickly. The rapidity mendatiuu, for the slleviatiun int &fiords
of solution depends tiros the else of the
grain as well as upon its .I.i : the more
soluble salts are flat. thin, dine -shaped ;
the more in.oluble are compact and
cubical in grain. Nu. 1 fur instep*, u
quite pure and small in grain, but very
difficultly soluble ; 1t is gritty iu feel :
Na 6. the purest and finest, stands
fourth. In choosing • salt, then, atten-
tion should be paid to the shape of the
grain ; for a quick pickle the fiat grain
is preferable, and for dry curing and
slow pickle the compact grain. The
best Canadian salts are slow in solution,
the best Liverpool • tittle mon rapid.
Too often Canadian salts have been con-
demned because a slowly dissolviag salt
his !e'en used where a rapidly dissolving
salt was required ; for instance, in the,,
salting .•f batter for irnnediate ne(.
Dealers and weer of salt seem to ply
too little attention to this Important

In the salting of food fit immediate

latter is required also for butter making.

best Canadian salts are either too bard
