A delicious way to 'etre salmon is t1.
cut it in slicer two or three inches thick.
Put these int.. • belting dish with little
lumpe of butter put on each dice, some
chopped parsley, • small onion minced
very flue; plenty of pepper and salt are
also to be scattered over the fish. Bake
until the tish is flaky. It is an improve-
ment if it is basted often. Drain the
fish before putting it upon the platter.
Tomato sauce may be served with it if
you choose.

veal and beef bogie for soup. Boil slow-
ly with celery, strain, and add part of
tomatoes.can of tomatoes. Cook half w hour.
Strain again. Mix one tablespoonful of
cracker powder with a cup acreast in •
bowl. Add it to some of the soup ; mix
thontughly, and pour all back into the

serve.

BEava.-Cut the cutlets out of a piece

They should be lams than half an inch
thick, and neatly trimmed, with not too

few blows with the bat, and grill them on

be clear and fierce, so that each cutlet
be full of juice when cut. Sprinkle with
salt, and arra a them in a circle on the
dish, overlapping each of them, round •
hemp of French beans prepared as fol-
lows : Boil them in plenty of silted
water. When done drain them thor-
oughly, and toes them in a saucepan for
• few minute with a large piece ..f but-
ter, add parsely finely minced, a sprinkl-
ing of pepper, and the juice of a lemon.
Serve with currant jelly.

Cooper's gelatine in a pint of cold water
in a deep pan, then let it stand tiifteen
minutes, then set on the range till it is
hot without boiling, then take it off, let
it cool • little and beat t, stiff fruth,with
two and a half of pulverized sugar and
the juice of four lemons. The whites
of the eggs are to be mixed with the
beaten gelatine. then all beaten together
for half an hour and put in moulds to
harden. Take the thew yolks of the

ed peel of one lemon, to be used as a
sauce for the pudding, or rich cream may
