MINCE Plat —A pound ut lean, ten-
der beef and two pounds of suet are
chopped fine; three pounds of currents,
three pounds o1 pared apples and a half
posed of candid lemon are chopped fine
and added the juice and grated nutmeg
and • quarter of an uuaoe eek of mane
and isrnamun pounded how A pint of
good eider and • glum of brandy are also
added and the whole is well mixed. Pack
into a stuns* to keep.
Saunaos Mu?.—Two part of lean
pork and one part of fat are finely chop-
ped; for three pounds of meat add two
teaspoonfuls of salt, one of pepper, two
of minced sage and a teaspoonful each of
mace and nutmeg. The seasoning is
evenly mixed with the meat, which may
be packed in jars and covered with
melted lard to keep.
Maccarcina are made as follows: Re-
move by scalding the skins of half a
pound of the beat almonds, and pound
thein to a waste in • mortar or bowl,
with two tablespoonfuls of water flavored
wish vanilla essence; beat up the whits
of 8 eggs to froth; add a pound of fine
sugar end mix evenly with the almond
paste. Drop it on tissue paper in small
rounds and bake 20 minutes.
Rtes CAxsa. —Beat up 8 euu,;es of
butter to a cream, add the whites of 7
eggs, will beaten, then a pound of sugar,
then the beaten yolks of the eggs; tautly
beat in a pound of ground rice tory
thoroughly: drop on a raking tin, sift
sugar over the small cakes and bake 20
minutes.
Gowns CAxat.—Beat up 4 ounces of
butter with four ounces of sugar, an
ounce of ground ginger, and the yolks of
4 eggs, well beaten. Add flour to make
a fine paste, roll out very thin and bake
20 miuutes.
OarMsat Gtxuea CAxsa. —Mix tine
oatmeal with sufficient maple syrup or
common molasses to form a stiff paste;
adding 2 .ounces of ginger to the pound
of oatmeal; roll out tin and hake half an
hour.
Flaxen Roues.—Rub two ounces of
buster into 2 lbs. of flour, add 2 well -
beaten eggs and half an ounce of Ger-
man yeast cake, or 2 teaspoonfuls of
fresh yeast in half a pint of new milk;
oeat up too a stiff batter and set it in a
warm place to rise for one hour; then,
without kneading, drop it on tins iu
round or long rolls and bake 15 minutes.
