Beef flavor according to
gender or carvass merits was the,
topic of discussion highlighted at
the Ontario Beef improvement
Association Field Day in Guelph
last month.
Ontario Agricultural College
meats specialist Dr. R. H. Ing-
ram told 150 beef producers, "It
is not possible for the consum-
er to detect differences in the
flavour of the meat from bulls,
steers, and neifers if the age,
finish, marbling, and texture of
the lean meat are similar." ti
"Bulls, steers, and heifers
may be sold with the same
grade stamp in the same retail
counter," Dr. Ingram contin-
ued. "The live classification
used in market reports does not
correspond with. carass grades.°
The reason is that carcasses are
not graded by sex, but by their.
