The main criticism of the orig-
inal grades was that the . third 1 grade, Commercial, was too- broad I in scope, At the top end it includ- ,
ed steer and heifer beef of good I
conformation with slightly less fat-.
than the Choice and Good grades, 1.
and ranged down to include young .
beef type cows. This caused some
difficulty in setting a fair price for ,
the grade when cattle were being '
sold by thb producer on a carcass
basis, it also hindered any wide I
use of the grade in the meat trade
where more specific designation of
I. quality is needed,

1 NatiOnal Beef graile Revised
The Canada Department of Ag-
riculture has announced a revision
in national beef grades, effective,
January 10, 1958, It'is hoped that
khis,,revision will provide an im-
proved means of interpreting con-
sumer Preferences to the producer
and also facilitate each quality of
beef in finding its own level of va-
lUe according to supply and de-
mand for it. The use of national
grades continues to be optional un-
less otherwise required by provin-
cial authorities,
This grade revision will split the
old grade C, or Commercial, into
two grades; Standard and Com-
mercial. Provision is Made to
sub-divide the Commercial into
three classes where desired. The
letter designation of the grades has-
been dropped and grade names
will be used exclusively. Further-
more, slightly more restrictive
standards with, respect to excess
fat on the top grades is involved.
To what extent the new grade,
Standard, may be used in mer-
chandising meat, depends on con-
