licensed creamery In Ontario. This competition has been held
since MO and most of the itopreVemeitt has been noted *during (the
last 10 or 12. Tharp; During the term of this competition, we are,
required to take a sample out of each churning of butter and it is
sent to a Federal Produce. Grader at any one of the Ontario grading
stations. Trophies and cash prizes: are awarded to the butter-
makers of .each plant who have done a good JO land. are rated among
the top few of each class.
In order for us to make top quality butter, it is first necessary
that you, as cream producers, do the utmost in your power to produce
a good quality cream under the eleanest moist sanitary conditions
poseible. lav other words, please take as much care with the cream
or milk you ship to up, RS you de with that.which you use on your
own table...... , , , someone else has to .eat the butter Which your
cream. produces and you probably eat it too.
Unless you, as producers. and as manufacturers and' Salesmen,
do the utmost to product toll quality cream and butter, we are not .
'going to eel' tonal butter in competition with other products. And
so, it will he with your fullest 0-operation that we prodnce a top
quality product with a gootL year_round market, and good market
prices, for your preduet and .ours, .
During the past few years when we have taken part in the eon_
petition, we are quite proud to say that we have won as few privies
each year, and with your help we hope to be rated among the top
ten again this year, ma butter is made by or under the supervision
of the certificate header of the plant, and the milk and creamis tested,
and graded by license, holders in the plant, who have been qualified
after e,xaminations.
It is to be noted that the variations in the fat percentages of
cream are the rule rather than the exceptionleand we strongly
recommend that you should aim for a fat test in your cream of
around 15%, (12% to 38%). Under normal conditione, ,'variations
of One to three percent from ,shipment to ghipment or between cans
are to be expected,
With the hot summer months Just ahead, please remember to cool
and stir your cream after 'Separating, before mixing it with the
previous batch, 'altd aisle, keep your cream in a cool place with fresh
air circulation,
By following,nheee simple rules daily, you will produce a
quality-cream. for which we will: pay you top price's.
