Fire destroys workshop
A fire Thursday morning destroyed a shed
and some industrial woodworking equip-
ment at the home of George Cowan on Lot
19, Concession 3 of Morris Township.
The Cowan sons, Greg, Ted, and Ken
operated Huron Recreations, a boat manu-
facturing business and Wingham Fire Chief
Dave Crothers said a lot of industrial
woodworking machinery including bandsaws
planers, ordinary table saws and a lot of
small stock like paints and resins were
destroyed in the fire.
The fire is suspected to have started either
in the suspended furnace or in the chimney.
The shed was partially covered by insurance.
Fire Chief Crothers said the lowest
estimate of damage to the building *mild be
,at least $24,000.
The Wingham Fire Department was called
to the scene about 10:10. The Brussels Fire
Department was also there for a few minutes
but left when it saw that the Wingham
department had things under control.
A barn about 50 feet away from the shed
which contained some livestock and some
machinery was the main concern so the
Wingham firemen had to ,tear the shed
down.
The Cowans did manage to get a 34 foot
boat out of the shed before the fire

Peggy Cudmore decorates
cakes for Christmas

Imagine a . rich, dark
Christmas cake , decorated
with a white icing and a
seast.aal message on top,
Some people might not like
Christmas cake with icing,
but enough people do to keep.
Peggy Cudmore of Brussels
decorating anywhere from
20-50 cakes around the
Christmas season.
Peggy has been icing and
decorating cakes for 45 years
now and she does anything
from Christmas cake to
wedding. , anniversary and
birthday cakes. She first got
into the business when a
friend of hers, the late Mrs.
Ella Shurrie who did cake
decoration coaxed Peggy to
get involved too.
She doesn't bake the
cakes, however. She just
decorates them. Another
women in Brussels, Liz Shol-
dice, does make Christmas
cakes for other peole and it's
usually one of hers that
winds up at Peggy's for
decoration.
The first cake Peggy ever
decorated was when Mrs.
Shurrie was away and she
did an order for her. She also
did more orders when Mrs.
Shurrie was sick.
"When she passed away,
I just carried on doing the
cakes," Peggy said.
Peggy has done about 11
Christmas cakes already this,
year, but thinks by
Christmastime, she'll have
done about 20 altogether.
"I enjoy doing it, I don't
think you should do it, if you
don't," Peggy says, She
does, however, go out to give
demonstrations on cake de-
corating.
One of the things Peggy
does before icing a cake is to
put corn syrup on the top of
it, which she says makes the
icing stick. She uses almond
and white icing but will use
colored icing if people re-
quest it.
She puts the almond icing
on, lets it dry, put the first
coat of white on and after
that's dry, the second coat is
put on and when the second
coat of white is, dry, the
decorations are put on .
"One thing you 'have to do
is to let it dry between
. icings," Peggy said.
She has four different icers
that she uses and about 25
points.
"All mine are the real
icers. You can use icing bags
with tips on, but I like the
leers best," she said.
The recipe for the almond
icing is usually made with
sweet potatoes, but Peggy
just uses ordinary potatoes to
make hers. Egg yolks are
used in the almond icing and
the whites are used in the
white. icing.
Peggy's recipe for the
almond icing is 14 a cup of
mashed potaotes which have
to be cooked well, two egg
yolks, two teaspoons of
almond extract and 16 a cup
of Crisco, just adding enough
icing sugar to get it as *tiff as
you can, You keep adding the
icing sugar until you can roll
it like a piece of pastry, Put
the icing on a sheet of wax
paper and roll it out with a
rolling pin until it is the size
of your cake, then put it on
top of the cake which should
have been coated with corn

The recipe for the second
icing is two egg whites, 1/2
cup of Crisco, a teaspoon of
almond extract, and 1/3 of a
cup of water added a little at
a time to your icing sugar.
Keep the icing under the
beater until it is thick enough
to stand up in peaks.
The secret of the second
icing is adding a little water
at a time.
The icing can be patted on
but rolling makes it the
same thickness all the way
through, Peggy said.
Peggy first got the almond
icing recipe from a woman in
Brampton about 40 years
ago, and that woman used
yams to make it. Peggy got
the white icing out of a book
when she was trying to get
some new ideas in icing.
"I expect that over the
years, I have changed it quite
a bit," she said.

Huron Bruce political
parties are busy preparing
for the February 18 election
and making plans to
nominate candidates.
R.E McKinley who has
represented the riding since
1965 could .not be reached on
Tuesday. A spokesman at his
Zurich constituency office
said he was enroute home
from Ottawa by car and was
not expected until Tuesday
night. She said final plans for
a P rogressive Conservatives=
nomination meeting had not
been made but expected a
meeting could be held very
shortly.
Huron Liberals • will
nominate on Thursday.
January 3 at a meeting in
Blyth Community Centre.
Graham Craig who was the
Liberal candidate in the May
.22 election has indicated he
again will seek the
nomination,
The Huron County New
Democractic Party will be
holding an organizational
meeting Thursday night to
discuss their strategy in the
upcoming federal election
and to set a date for their
nomination .meeting.

officer. Garnet Hicks of
Exeter who had served since
1966 resigned in November
having reached retirement
age and no successor has
been appointed.
There will be no door- to -
door enumeration of voters
for the February 1980
general election.
