Michelle Mar­ cotte, a food consultant at Agriculture Canada says yes. There have been some low acid tomatoes on the market and citric acid should be used in tomato canning to give the required acidity needed to prevent spoilage. There have been conflicting reports however, about the existence of low acid tomatoes in Canada. To determine the acidity of tomatoes, commercial-- processors and agricultural research stations across Canada were asked for in­ formation on the acidity of the tomatoes from their area. They reported that the acidity of tomato varieties varieties vary considerably across Canada. Fur­ thermore, tomatoes become even progresses or if the tomatoes become overripe. Therefore, there is the possibility that consumers may use tomatoes which are low in -acid for canning. “Home canners should make use of this information to guard against any spoilage of their tomatoes” says Ms. Marcotte. “Do not use overripe or soft ripe fruit. Add citric acid to the tomatoes chosen for canning (*4 teaspoon per pint or r2 teaspoon per quart), cold pack, then process in a boiling water bath, 55 minutes for pints, (small canning jars) or 60 minutes for quarts (medium canning jars).” When canning tomato juice add the same amount of citric acid and process in a boiling water bath for 40 minutes. If you find the flavor of canned tomatoes slightly tart, add a little sugar to taste (about 1 teaspoon per small con­ tainer.) By adding citric acid and properly processing in a boiling water bath you can be sure of a safe product. For more complete canning instructions, write for the By MRS.
