Nancy Mary Bedrij and Myron Arnold Gackstetter exchanged
marriage vows August 26 at Crestwick Baptist Church in Guelph. The
bride is the daughter of Mr. and Mrs. Wasyl Bedrij, Guelph and Mr.
and Mrs. Arnold Gackstetter, Guelph'are parents of the groom. Dr.
R.H. Boytim officiated. The maid of honour was Luba Bedrij and
bridesmaids were Mrs. Gail Toner, Mrs. Irene Seikman and Mrs. Debra
Green. The best man was Dean Gackstetter and guests were ushere1:1`,
by William Anderson and Thomas Toner and the organist was Betty
Thiessen. After honeymoon to the Muskokas, the couple have taken up
residence in Guelph.
New potatoes are
a real special treat
The Ontario yellow table turnip
is really a rutabaga. You will find
it surprisingly sweet and milder
than the older varieties.
Good weather conditions have
contributed to a harvest of
uniformly-sized, high quality
rutabagas. Although the Ontario
rutabaga is a cool weather
vegetable, it is a myth that
rutabagas should be picked only
after the first frost. The first
summer rutabagas have a milder
flavor than the tangier rutabagas
harvested later in the season.
They are particularly tasty when
served raw.
Raw rutabaga is an excellent
source of vitamin C, according to
the food specialists at the Ontario
Food Council, Ministry of
Agriculture and Food. Try the
first fresh rutabagas cut into
sticks as appetizer dunkers with
a seasoned dip, or finely-diced
and tossed with early fall apples
in this recipe for Rutabaga
Waldorf Salad.
Rutabaga Waldorf Salad
2 medium apples, cored and
diced
1/2 'cup chopped celery
1/3 cup raisins
1 cup finely-diced rutabaga
1/2 cup mayonnaise
2 tablespoons milk
1/2 teaspoon salt
1/2 teaspoon nutmeg ,
Combine apples, celery, raisins
and rutabaga. Mix remaining
ingredients and toss with salad.
Refrigerate covered, to blend'
flavors. Makes 4-6 servings.

part of September as the falling
leaves,
I always feel a twinge of
sadness when September arrives
because it signals the end of
many things lazy summer days,
long walks on sandy beaches and
drives through the country with
,all the windows down. Ice cream
cone and slabs of watermelon
don't taste as deliciously
refreshing as they did during
July's heat wave, Even
barbecued hot dogs and ham-
'. burgers have lost some of their
zest.
Of course, September may be
sunny and warm and filled with
as much fun as the summer
months, but the last long week
end fling is history.
We try to shed the carefree
habits of July and August and
force ourselves back into a
routine. We watch for Autumn's
subtle signs of change; we know
what is coming for 'September
undeniable announces that
winter is on its way.
The first new potatoes of the
season are always a special treat.

Sunny days that quickly pass
and end with brilliant sunsets,
rainy days that seem to last
forever and shadows that fall
early in the evening and linger
late in the morning,
The wind always seems brisk;
it rustles the corn stalks and
knocks some brown leaves to the
ground, giving us a hint of things
to come.
In the ditches along the road-
sides lay a few dying boughs
reminders of the furious winds
that lashed the countryside now
and again during the summer.
The trees turn patches of red
and gold toward the sun; a few
hardy marigolds and asters
linger among the dead leaves in
the flowerbeds; the gardens have
surrendered most of their boun-
ty, and the pumpkins lie among
the vines waiting for the first
touch of frost.
Only the corn fields retain
their crops, At night, corn dryers
" drone in the darkness, and the
lights of tractors bob in distant
fields.
Crickets set up a steady hum
every night, and every day flocks
of chattering birds gather in the
tree tops to plan their trip to
southern climes.
During the day, the streets of
town are strangely quiet, but
they come alive about ten to nine
every morning and about half-
past three every afternoon with
kids on foot, kids on bikes and
older ones in cars. The parade is
repeated twice at noon, I can
almost tell time now without a
watch!
The fall and winter catalogue
arrived weeks ago, and its pages
are already soiled. Bargain
hunters nabbed onto most of the
summer stock in the stores dur-
ing the late season sales. Now
coats, jackets and boots are
reappearing on the shelves.
Fall fairs are the big attrac-
tions these days. The carnival
music, the midway rides, the
being harvested all over Ontario.
Food specialists at the Ontario
Food Council, Ministry of
Agriculture and Food, report that
there are good supplies of these
delicious potatoes.
Early potatoes have charac-
teristic smooth, slightly
feathered skins. They should
relatively free from blemishes
and discoloration. Because new
potatoes are so delicate, they
should be stored in the
refrigerator and used within one
week for best quality,
Early potatoes require very
little preparation for cooking.
Scrub the potatoes gently and
leave the skins on. If the potatoes
are small, cook them whole.
Larger ones can be cut for
quicker cooking.
To cook, put potatoes in a
saucepan and barely cover with
boiling water. Cover, return the
water.-quickly to the boil, then
reduce the heat and boil gently
until the potatoes are just tender.
Don't blanch
those peppers
The pepper is a perfect
vegetable to freeze because it
doesn't require blanching. The
natural acidity of both sweet and
hot peppers checks the enzyme
activity, eliminating the need to
blanch or precook.
ChoOse sweet pepper:: that are
firm and thick-fleshed with a
bright, shiny surface. For a tangy
flavor, use when mature but still
green, or for a sweeter flavor,
pick when fully ripe and scarlet-
red.
To prepare peppers for
freezing, wash, cut out stems,
seeds and ribs.
For whble stuffed pepper
retipes freeze them stacked one
inside another with a strip of
freezer paper separating them. If
you decide later to chop or slice
the frozen peppers, cut them
while still partially frozen,
For stir-fried recipes and
colorful garnishes, cut the
peppers in strips or slices or dice
them for mixing into sauces,
casseroles and complementing
sweet corn and stewed tomato
dishes. For easy removal from
freezer container, freeze cut up
pepper on a baking sheet before
packaging. Once frozen, pack
peppers in tightly sealed con-
tainers.
