LLOYD ALLEN Louise Elizabeth McVean, and Lloyd Garnet Allen were united in marriage at Hensall United Church on June 25, 1977 by Rev. Donald Beck. The bride is the only daughter of Mr. and Mrs, Robert MacVean, RR 3, Bayfield and Mr. and Mrs. Garnet Allen, Hensall are parents of the groom. The matron of honour was Gwen McClinchey, the bridesmaid was Marg McDonald and the flower girl was Rosslyn Elliott. The, best man was Randy Campbell and guests were ushered by Peter MacVean. Robbie McClinchey was ringbearer. The reception was held at the Zurich Community Centre. After a honeymoon to Niagara Falls, the couple is residing in Hensall. MR. AND MRS. BARRY MILLER Melonie Joan Veal and Barry Edwin Miller exchanged marriage vows at Hensall United Church on July 2, 1977. The bride is the daughter of Mr. and Mrs. Ross Veal, Hensall and the groom is the son of Mr. and .Mrs. Edwin Miller and the late Jean Miller, Thames Road. Melissa Veal was the maid of honour and bridesmaids were Karen Snow, Barbara Miller and Barbara Sturgeon. The best man was Gerald Spruyt and guests were ushered by Brian Miller, Michael Veal and Paul Ward. Rev. Donald Beck officiated. After a wedding trip to the Collingwood area, the couple has taken up residence at RR 2, Lucan. I dated a letter the other day and got quite a shock — 13'7/77, the thirteenth day of the seventh month of 1977. Good grief! The year is more than half over. Wasn't it just a couple of Months ago I stared out my win- dow at a 12 foot snowdrift? One of my neighbours offered to br- ing groceries on his snowmobile, and I wondered whether I'd ever get out of here, It was early in February. and summer seemed far, far away, Bayfield woman named to council Moira Couper of Bayfield has been appointed to the South- western Regional Council of the Ontario Educational Com- munications Authority (OECA). The appointment is for three years. Her job is to answer questions about Ontario's educational television system and pass along comments and suggestions to the OECA. Five councils, each with 15 members, were formeesix years ago to keep the Authority in- formed about regional cultural and educational needs. Mrs. Couper is a consultant in Christian Education for the United Church of Canada. She also leads craft workshops at London's Fanshawe College. Wasn't it just a few weeks ago I welcomed Easter with the thought, "Spring can't be far behind"? Wasn't it just a few days ago Morn planted her garden, Dad cut his hay and I gave their lawn its first manicure of the season? No, those things happened longer ago than I realized. The skimmer vacation I looked forward to for so long is over. Canada celebrated its one- hundred-and-tenth birthday amid tv promos and politicians' huffs. The evening breeze no longer carries the scent of fresh Cut hay. The strawberries are past; the birds devoured the cherries before they were ripe again. The kittens are half-grown. The year has rounded the bend heading toward fall, and I haven't accomplished one-tenth of the things I vowed to do when '77 was young: I haven't written a supply of columns to last for the summer; in fact, I don't know what will be in the paper next week. I haven't visited the friend in Oakville who invited me in May. I haven't cleaned my storeroom, but I can still get in by taking one step forward and one back, I haven't lived in my apartment for the past two months anyway; I just store my clothes, furniture and food here. I pop in once in a while, spend an hour at the typewriter, open a can of something, dump the dirty dishes into the sink and dash out again. In spite of the running, my list of things to do isn't any shorter. That's good, though. It's better to be busy than to have time on your hands. When you think- about it, time is a precious thing. Do you ever find it frightening when you realize how quickly time passes us by? There never seems to be enough time to do all the things we want to do. I suppose that's what makes life intriguing, If we experience everything, what wopld we have to look forward to. Unfortunately, our priorities are sometimes out of whack. People are the most important things we can spend our time on; It's a funny thing about beets. You rarely hear of anyone not liking them, yet they're probably one of the most forgotten of vegetables...forgotten because we don't seem to do much with them! For starters, look for clean, firm, smooth beets free from cracks or other blemishes. For 6 servings, allow 2 pounds; or 20 - 30 small, 12 - 18 medium or 6 - 10 large beets. Store in a cool moist place or refrigerate, with a 1-inch stem and all roots attached. Use within several weeks. To prepare, wash well under run- ning water without bruising the skin to avoid "bleeding" during cooking. Boil unpeeled beets in enough water to cover. Cover and boil 14- 18 minutes for small beets, 24-30 for medium and 30-60 minutes for large. They're cooked when you can slip the skin off easily. Serve whole, sliced or diced, seasoned with salt and drizzled with butter. In the case of panning, melt butter in a large heavy frypan, add beets that have been peeled, sliced thin and cut in small fingers, and sprinkle with salt. Add a couple of tablespoons of water to prevent scorching, cover .and cook gently for about 18 minutes. Shake or stir frequently to avoid sticking. If you're short of time, pressure cooking is the answer! Pressure cook unpeeled, whole' beets (1 L2 inches in diameter) for about 8 minutes. Don't throw away those fresh crisp beet tops! Not only do they come free with the fresh -beets, but they're nutritious too...one serving of beet greens con- tributes at least 25 percent toward the recommended daily intake of vitamin A and vitamin C. Refrigerate them in a plastic bag and use within 1-2 days. Wash well and leave a little water on the leaves for cooking. Boil as you would spinach with salt between the layers and allow 4-8 minutes for 2 pounds. Serve whole or chopped beet tops' with butter. Colorful "Hungarian Beets" and "Beets with Apples and Onions" will zip up the flavour of your favorite vegetable, and complement any meat. HUNGARIAN BEETS 1 1 2 pounds beets, cooked, peeled and sliced, 1 2 cup dairy sour cream, 2 tablespoons mayon- naise or salad dressing, 2 tablespoons chopped fresh chives, 2 tablespoons lemon juice, 1 teaspoon brown sugar, teaspoon dry mustard Combine all ingredients. Heat slowly about 5 minutes, but do not boil. 6 servings, BEETS WITH APPLES AND. We'll do It tomorrow. But when tomorrow becomes today, it looks the same as yesterday, and it certainly isn't any longer. We depend on tomorrow for more time. The frightening ques- tion is, "What happens if we run out of tomorrows?" Did we make our time count today? cup diced peeled apple, '4 cup chopped onion, 1 4 teaspoon salt, 1 tablespoon brown sugar; 2 teaspoons lemon juice Melt butter in frypan. Add remaining ingredients and mix well. Cover and heat quickly to form steam.
