You've been my neighbour
longer than I care to remember.
From my second floor window,
I've watched you creep closer
and closer.
You arrived in late November
as a mere skiff, making the
whole neighbourhood look clean
and bright. But you hauled in
load after load of white stuff.
Then you brought a friend—an
exterior decorator, who arrang-
ed and rearranged your crystals.
For diversity, he gave each of
your four walls a different
appearance. The back sloped
ruggedly, while the front
featured a sheer drop; one side
had a smooth surface. the other
was adorned with bumps and
hollows, He rounded your split-
level top, leaving one end a foot
lower than the other.
When he achieved the desired
design, he mortared your ex-
terior into a solid, impregnable,
uncompromising mass, and you
posed haughtily in our midst.
Although you were a new-
comer, you wasted no time in
asserting your authority in the
community. You claimed as your
own anything that got in your
way, including a car. a child's
toboggan, a red wool scarf and
one green mitten. You also
covered a slab of cement which,
if I remember correctly, was
called a sidewalk and was known
as public property.
You were entertained by the
children who attempted to climb
to the top of you. Just when they
thought they had made it and
were beginning to feel like the
conquerors of Mt. Everest, you
sent them sprawling head over
heels to the bottom with a smirk.
Our neighbourhood is not un-
friendly nor discriminatory, but
we tried every possible means to
run you out of town, You were
tickled by the shovel; you were
challenged by the plow, blower
and blade. Undaunted you stood
your ground, dwarfing your
adversaries.
Gazing at you now from my
window, I marvel at your
dominance over me and all the
other people around you. If I
didn't know better, I'd think you
had become a permanent resi-
dent. It's difficult to imagine, but
I know the same mastermind
that built you is going to break
you.
Someday soon the sun and the
rain are gonna get you. Little by
little, you'll shrink under their
merciless assaults. Your im-
posing white walls will turn to a
sickly brown shade.
The roof of the car will
reappear, and later the fender
will emerge, When the vehicle is
removed, you'll lose your com-
posure completely, and your
sides will cave in. After a little
more sun and a little more rain,
the toboggan, scarf and mitt will
be pried from your grip. The slab
of cement will' once again
become a public sidewalk, and
between its cracks, shoots of
green grass will peek.
You'll be evicted, unwelcome
neighbour,
Pancakes are a definite people
pleaser. There are so many kinds
and variations that there is bound
to be one to suit every taste. Have
you ever tried a Creole Pancake?
Creole cookery is a superb
melange, a beautiful blend of
French, Spanish, Anglo Saxon
and Indian influences, as in-
terpreted and modified by Negro
cooks, It's extremely subtle, a
carefully contrived balance of
seasonings. But, in spite of its
complexity and richness, Creole
food reflects the greatest of
household economics.
Rice Pancakes—an inspired
way to use leftover cooked rice,
are unique at the breakfast table
accompanied by syrup, stewed
fruits or jam.
To give your family a real treat
on Shrove Tuesday serve them
Rice Pancakes as the main
course with a Cheese Sauce and
Poached Apples. A delicious
combination they'll love.

Rice Pancakes
1 cup unsifted all-purpose flour
1/2 teaspoon salt
1/2 teaspoon nutmeg
2 eggs, beaten
1 cup milk
1/4 cup Crown Brand corn syrup
2 cups cooked rice
3/4 cup raisins
Mazola corn oil
Stir together flour and salt in
mixing bowl. Add eggs, milk and
corn syrup; mix until smooth.
Stir in rice and raisins. Heat
about two tablespoons corn'oil on
griddle or skillet over medium
heat. Using 1/4 cup batter for
each pancake, pour batter onto
griddle and spread, if necessary,
Cook, turning once, until golden

brown on both sides and edges
are crisp. Continue frying pan-
cakes, adding corn oil as needed,
Keep warm while cooking
remaining pancakes. Makes
about 16 (5-inch) pancakes.
Cheese Sauce
1 tablespoon butter or margarine
1 tablespoon Benson's or Canada
corn starch
1 cup milk
1/4 teaspoon salt
Dash pepper
8 ounces cheese, shredded (2
cups)
Melt butter in small saucepan.
Remove from heat. Stir in corn
starch. Gradually mix in milk,
salt and pepper. Bring to boil
over medium heat, stirring
constantly, and boil one minute.
Stir in cheese; cook until melted.
Makes about 1 1/2 cups.
Tangy Poached Apples
3/4 cup Crown Brand corn syrup
2 tablespoons butter or
margarine
2 tablespoons lemon juice
1 teaspoon grated lemon rind
2 1/4 cup sliced, peeled appies,,
Mix together corn syrup,
butter, lemon juice, and lemon
rind. Bring to boil over medium
heat. Boil five minutes. Add
apple slices. Cover and reduce
heat. Simmer five minutes. Use
as a topping for pancakes. Makes
six servings.
Apple Pancakes
2 cups sifted all-purpose flour
1 teaspoon salt
1' tablespoon baking powder
143 teaspoon cinnamon
1 cup applesauce
2 beaten eggs
13 4 cups milk
1 tablespoon butter, melted
Mix dry ingredients. Combine
applesauce, eggs, milk and
melted butter. Add to dry
ingredients and mix quickly until
just combined. For each pan-
cake, drop 3 tablespoons batter
on well-greased hot frypan. Cook
until bubbles form on surface, (3-
5 minutes). Turn and brown other
side (3-5 minutes), Serve with hot
Apple Cinnamon Sauce. Makes
about 20 pancakes.
Apple Cinnamon Sauce
1 cup brown sugar
34 cup apple juice
'4 teaspoon cinnamon
2 tablespoons butter
1 cup applesauce
Combine first three
ingredients. Boil to a heavy syrup
(about 10 minutes). Stir in butter
and applesauce. Makes about 2
cups.
Crepes
1 cup cake and pastry flour
Pinch of salt
2 eggs-
1 cup milk
2 tablespoons melted butter or
margarine •
Preheat a heavy 5-inch frypan
and brush with melted butter.
Blend flour and salt, Beat eggs,
stir in milk, then gradually add
liquid to dry ingredients, beating
until smooth. Blend in butter.
Cover and chill at least 1 hour.
Pour about 2 tablespoons of
batter in preheated pan and tip to
coat with a thin layer. When
brown, turn to brown other side.
Makes 12-14 five-inch crepes or
9-10 seven-inch crepes.
For larger crepes, use about 3
tablespoons batter or enough to
coat pan with a thin layer.

Your Ontario Government operates a program called
Vocational Rehabilitation Services, which is designed to assist
physically, mentally and emotionally handicapped people to
become employable and where possible self-supporting.
These services are available without charge.
They include:
• medical and vocational assessments
• vocational guidance and counselling
• work adjustment training
• job placement
• artificial limbs, wheelchairs and braces
• training in community colleges, universities,
• trade and business institutes, and industry
Last year, 11,800 handicapped persons received one or
more of these services.
The program also helps employers, by pre-interviewing job
applicants, providing information about their abilities, sharing
wage payments during initial on-the-job training, and offering
many other supportive services.
Through the Ontario Ministry of Community and Social
Services, a staff of trained counsellors and supervisors helps
the handicapped person develop his or her work potential.
